Do you remember when cake batter dip was all the rage? Trust me, I made my fair share of cake batter dips. Then I discovered something even better! Cake batter dip’s rich, chocolatey cousin, the brownie batter dip.
Then there was only one sensible thing left to do which was obviously to turn it into skillet s’mores dip in the oven. The final step in this s’mores dip recipe will deliver that perfect fireside marshmallow glow.
BROWNIE BATTER S’MORES DIP INGREDIENTS
Brownie Mix- Traditional dry boxed fudge brownie mix without any nuts or chocolate chunk add-ins work best with this recipe.
Marshmallows- You have two options when it comes to the marshmallow topping. You can USE regular-sized marshmallows for a big ol’ marshmallow on each bite of dip. Or you can cover it in a layer of mini marshmallows so you’re not having to hold the marshmallows onto your cracker as you would with the bigger ones.
Chocolate Chunks- Chocolate chunks are narrowly preferred over chocolate chips just because they give you more melty goodness in each bite. This recipe works with either chunks or chips in milk or dark chocolate varieties, depending on your preference.
Graham Crackers- These graham crackers are strictly for dipping. I use traditional graham cracker squares but you can find honey, cinnamon, or even chocolate graham cracker varieties.
HOW TO MAKE S’MORES DIP
- Start by adding the brownie mix, cream cheese, and 1/4 of milk to a mixing bowl. Then beat than together until it’s nice and smooth. Thin out the dip by adding 1 Tbsp of milk at a time and then mixing until your desire consistency is reached.
*If you want your dip to be fluffy instead of thick and rich, mix in 1 tub of thawed Cool Whip now. - Next, spread the brownie batter into an even layer in the bottom of a cast-iron skillet or a baking dish.
- After that, you’ll top the dip with graham crackers crumbs and then arrange the marshmallows over the top so the whole dip is covered.
- Then all you need to do is broil the marshmallows in your oven until they’re golden brown… Or charred depending on how you like your s’mores.
- Once the marshmallows are toasty, remove the dip from the oven and serve it immediately with some graham crackers broken into sticks and some vanilla sugar wafers.
WHY IS A S’MORE CALLED A S’MORE?
The term “s’more” is simply just the words “some more” smooshed together, kind of like the ingredients in this famous dessert! I have never known a person to enjoy this chocolate, marshmallow, and graham cracker sandwich and not ask for “s’more” after. Fun fact, the first known publishing of the “s’more” recipe was in 1927 in a Girls Scouts’ handbook. Now we can all thank the Girl Scouts for our annual cookie obsession and our summertime s’mores cravings!
HOW DO YOU MAKE A S’MORE WITHOUT A CAMPFIRE?
Believe it or not, there are three very easy ways to make a s’more right in your own kitchen!
- Oven: On a baking sheet, set up a graham cracker square half and top it with a piece of chocolate bar and a marshmallow. Place the sheet in the oven on broil for a minute or so. Be sure to watch the s’mores the entire time or they can go from perfect to perfectly ruined in the blink of an eye! Remove the s’mores and top them with the remaining half of each graham cracker square.
- Microwave: Similarly, place a graham cracker half topped with chocolate and marshmallow in the microwave for 15-20 seconds. The marshmallow will not char or brown, but it will expand quite quickly so keep an eye on it! Remove it and top it with the other half of the graham cracker.
- Stovetop: This more traditional method involves roasting the marshmallow over the open flame of your stovetop and assembling the sandwich after. Be careful because the same fire hazards you may encounter at a campsite are also possibilities in your kitchen!

TOOLS USED TO MAKE THIS EASY S’MORES DIP RECIPE

Ingredients
- 18.3 ounces brownie mix (1 box)
- 8 ounces cream cheese softened
- 4 tablespoons milk plus more as needed
- 4 graham crackers crushed into crumbs
- 12 ounces regular-size marshmallows (1 bag)
- Graham crackers for serving
- Vanilla sugar wafers for serving
Instructions
- Add the brownie mix, cream cheese, and 4 tablespoons milk to a mixing bowl. Beat until smooth with a hand mixer. Add more milk 1 Tbsp at a time until the mixture is your desired consistency. (You want to be able to dip graham crackers into it without them breaking.)
- Transfer the brownie batter to a cast-iron skillet or oven-safe baking dish and spread it into an even layer.
- Sprinkle the graham crackers crumbs over the brownie batter. Then arrange the marshmallows on top of the graham crackers covering the surface of the dip entirely.
- Broil the marshmallows until golden brown (or more if you like them kind of charred).
- Remove the dip from the oven. Serve immediately with graham crackers and sugar wafers for dipping while the marshmallows are still gooey.
