We can’t decide what our favorite part of this salad is, the cherries, the marshmallows, or the cheesecake flavor. I guess that’s a good thing, though, because the entire salad is fantastic! This dessert is so quick and easy to make that I love to take it for potlucks, and hot summer gatherings and I also make it as a pick me when the weather is kind of cruddy. The best part is the kids love to make this salad, so I get just to supervise and then totally enjoy this light, fluffy deliciousness when it’s done!

Ingredients
Cream cheese: For the best flavor and creamy texture, full-fat cream cheese is recommended, but a lower-fat option, like Neufchâtel, can also be used.

How to Make Cherry Cheesecake Salad
STEP ONE: Place the softened cream cheese in a mixer and beat it quickly until it is smooth and fluffy.
STEP TWO: Mix the whipped cream, mini marshmallows, and cherry pie filling and mix well.
STEP THREE: You can enjoy this salad right away or chill it in the refrigerator for a few hours to let the flavors come together.
Tips for Success
- Don’t forget to set out the cream cheese well ahead of time to come to room temperature. The softer the cream cheese, the better it will mix with the other ingredients without any cream cheese lumps.
- If you forgot to set it out, or the cream cheese is just not soft enough, you can remove the cream cheese from the box but keep it in the foil, microwave a bowl of water, empty the water, and then cover the brick of cream cheese with the warm bowl for about 10 minutes, which should completely soften it.
- Because of the nature of cool whip, this salad doesn’t store well and should be eaten within 12-24 hours of making it.

Serving Cherry Cheesecake Salad is a great excuse also to make a full on dessert board full of your favorite treats! Surround the cherry salad bowl with graham crackers, vanilla wafers, Oreo cookies and animal crackers. Set out large marshmallows for everyone to dip or buy a premade graham cracker crust to break into large rustic pieces for dipping. Can I use another fruit pie filling?
If cherry pie filling isn’t your jam or you just want to try something new, you can swap out the cherry pie filling for another fruit! Blueberry, peach, or apple pie filling would all work in this recipe and with the treats and toppings mentioned above. You can also swap the cherry pie filling for whole berry cranberry sauce for a sweet tart cranberry experience that would be great around the holidays!

- 8 ounces cream cheese at room temperature
- 8 ounces Cool Whip thawed (1 tub)
- 4 cups mini marshmallows
- 42 ounces cherry pie filling (2 cans)
Instructions
- In a large mixing bowl, beat the cream cheese on high until fluffy.
