We’re kind of obsessed with bite size appetizers. Partly because we love to host get together with friends and family and partly because they’re usually pretty easy to make. These delicious Tuna Avocado Sushi Cups are one of newest creations and they are so good. We took all of the ingredients of our favorite sushi roll and put them in phyllo cups. I know you’re probably thinking, sushi is bite size already, and you’re right but I’ve just never gotten the hang of making it myself. I’ve tried my hand at making sushi rolls a few times and I never get it quite right. Oh they still taste good but they kind of fall apart. These tuna avocado sushi cups mean no seaweed, no rice, and no rolling just lots of flavor.
Like I said, these pretty little sushi cups are super easy to make. You start with ahi tuna. Make sure the tuna is sushi grade so that it is safe to eat raw. Dice the tuna up into small cubes. Next cut open a fresh avocado and dice it the same way. Gently mix the two together, don’t go overboard because you don’t want to break up the avocado. Place a spoonful of the mixture into each phyllo cup. Now normally I’m all about making things ahead of time but if you’re going to serve this at a party I suggest doing all of this right before guests arrive. You don’t want the avocado to turn brown while it waits. Then when you go to serve it drizzle each cup with a mixture of soy sauce and mirin and sprinkle then with black sesame seeds. Don’t skip the sesame seeds they make the sushi cups extra pretty!
It’s a gorgeous, light, and delicious appetizer that is guaranteed to impress at any party. Make them for your friends or just whip up a few for a light lunch. If you love sushi I promise you’re going to love these!
