As soon as the temperatures start to rise and the sun comes back out here in Oregon I can’t wait to eat my weight in berries. I’ve told you before of my love of the berries that just grow wild here in Oregon when I shared my Raspberry Balsamic Vinaigrette. First, they taste amazing and second they have the best colors. I really do love when my food is pretty! Summer salads with fruit and nuts and vinaigrettes are the best! I was making a salad the other day for lunch and remember that I bought raspberries the other day I added them into the salad along with every other favorite salad topping of mine and the Fully Loaded Raspberry Salad was born!!
I keep a hue bag of sliced almonds in my pantry that I grab at Costco. I love to through a handful into a dry pan and toast them to add to my salad. I love a good crunch in my salad and I worship croutons but when it comes down to it. fried bread squares aren’t going to do me any favors, but the protein I get from the addition of the almonds instead helps to keep me full longer. That’s big for me because I get pretty hangry when I get hungry. 🙂 This summer grab your berries and make a Fully Loaded Raspberry Salad!
Ingredients
- 4 cups of mixed greens your favorites
- 1 cup cherry tomatoes halved
- 1 cup red quinoa cooked
- ½ cup feta cheese crumbled
- ½ cup sliced almonds toasted
- 1 cup fresh raspberries
- ¼ cup shallots diced
- Raspberry Balsamic Vinaigrette to taste
Instructions
- combine all ingredients in a salad bowl and toss to coat with dressing
- serve and enjoy!
