It’s beginning to look a lot like Christmas!

Have you broke out the decorations? Is your home decked out and ready for the season? We are officially pretty much ready here! My hubs hung the Christmas lights this past weekend and since it gets dark so early in the day they are on when I come home from work. It puts a smile on my face that’s for sure! My daughter begged to get the Christmas tree out and asked every hour if we could, so I caved and it came out a few days before Thanksgiving. I’m a big fan of holding off until after Thanksgiving, but she was so excited to get it out and decorate it I just couldn’t say no to those puppy dog eyes! I can still be thankful with a Christmas tree up right? I thought so!

Since the decorations are up and the presents are mostly bought next up are all the Christmas treats! I love baking all kinds of different treats, but I find myself leaning towards easy recipes the older I get and the busier I get. Needless to say with two little girls I need fast and easy, yet impressive treats to adorn my trays this season.

What kind of cookies do you enjoy making? Do you go all out and make a beautiful tray full of perfectly cut out sugar cookies dressed perfectly in frosting? I wish I could pull that off, but I know I was just be disappointed and frustrated by the time I got done doing that. I know my limitation and that’s one of them! Instead I learn towards easy treats that are still delicious and look like I slaved over them. Bark is one of those treats and I know people think is impressive and I know it’s easy!

This Chocolate Cranberry Walnut Bark came together in literally minutes. The longest part of the whole recipe was simply waiting for it to cool enough to dig in!

I recommend keeping it in the refrigerator or freezer for storage. If it gets warm at all it well melt and we don’t want that! Simply break it into pieces and store it in an air tight container. When it’s time to prepare your cookie trays just grab some from the container and you are ready to go!

Chocolate Cranberry Walnut Bark

Ingredients

  • 1 lb chocolate almond bark
  • 5 oz package dried cranberries
  • 1/2 c. chopped walnuts
  • 1/4 c. white melting chocolate

Instructions

  • In a double boiler melt chocolate almond bark over low heat. Stir until smooth. Spread out on a baking sheet lined with wax paper.
  • Sprinkle with walnuts and cranberries, slightly pushing down on them to adhere them to the chocolate.
  • In a small microwave safe bowl melt white chocolate according to package directions. Drizzle over bark.
  • Let cool completely. Break into pieces.
  • Store in air tight container in refrigerator.
