2020 has been QUITE the year, right? It’s simultaneously flown by and dragged on. (If that even makes any sense…)
Now that November is almost here, I’m starting to think about how Thanksgiving is going to look very different this year than in previous years. No breaking out our extra tables from the basement, and no cooking multiple turkeys to feed my extended family. But, believe me when I say that a delicious meal WILL be cooked!
Every year before Thanksgiving I love to create and experiment with some new comfort food recipes for my favorite family holiday. Don’t worry, I test them out first before the big day.
Nothing worse than finding out your new gravy recipe tastes like cardboard right as you set out that perfectly cooked turkey.
So the other day, I drove to Walmart and hopped on my Ibotta app. I saw the French’s crispy onions sitting there on the shelf and thought, “Potato and onions are best friends.” Now all I had to do was grab the ingredients I needed and test out the recipe.
You guys already know that I am the biggest fan of Ibotta. Who doesn’t love cash back simply from buying groceries I already would have?!

I tested out the delicious grocery items included in the Thanksgiving bundle and came up with this DROOL-worthy side dish. This scalloped potatoes recipe that will absolutely be making an appearance on my family’s Thanksgiving table. French Onion Scalloped potatoes are the perfect cheesy, crunchy, flavorful side that will leave your family begging for more!
Ingredients for French Onion Scalloped Potatoes
- Yellow potatoes (or Yukon gold potatoes)
- Campbell’s cream of mushroom soup
- Dry onion soup mix
- Whole milk (or cream if you’re feeling extra decadent)
- Cheddar cheese
- French’s crispy onions
In my never-ending love for potatoes, I’ve found that every variety of potato has its very own purpose.
Red potatoes are great for roasting. I love me some roasted potatoes with breakfast, but they’re not the best for dishes like these homemade scalloped potatoes. They’re just not starchy enough.
That’s why I stick with Yukon gold potatoes (AKA yellow potatoes) for this recipe. They’ve got the perfect amount of starch to help thicken up the creamy sauce while everything bakes.
How to Make Scalloped Potatoes
- Start by preheating your oven to 350 degrees F. Then grease the inside of a 9-inch x 13-inch baking dish with non-stick cooking spray.
- Next, thinly slice the potatoes. I love using a mandoline (one of my favorite kitchen tools!) to ensure I get even slices. But you can use a chef’s knife and cut 1/4-inch slices by hand and be just fine.
- Then you’re going to take the potatoes slices and layer them in the baking dish. Separate the slices from each other and lay them all around.
- After that, it’s time to make your sauce! In a large bowl, whisk together the cream of mushroom soup, onion soup mix, and milk until they’re combined.
- Pour this mixture over the layered potatoes and tightly cover the dish with aluminum foil.
- Cook in the preheated oven for 50 minutes.
- After 50 minutes, remove the foil and sprinkle your potatoes with shredded cheddar cheese on top. Pop the dish back into the oven, uncovered. This allows for the cheese to melt and the potatoes to crisp up a bit.
- When the cheese is bubbly and melted, remove the pan from the oven and top with French’s Fried Onions. I like to be extra generous when topping with crunchy onions. To me, the more crunch, the better!
- Serve immediately and enjoy!
As with any scalloped potatoes recipes, the sauce is not meant to be super thick.
You’ll definitely want to spoon on some of that yummy cream sauce that’s left in the pan once you serve it up! No one ever said that French Onion Scalloped Potatoes are super pretty on the plate, but man-oh-man they sure are beautiful to your tastebuds!

Ingredients
- 5 pounds yellow potatoes
- 10.5 ounces Campbell's cream of mushroom soup
- 1 packet dry onion soup mix
- 2 ½ cups whole milk (or heavy cream)
- 1 ½ cups cheddar cheese shredded
- 1 cup French's crispy onions plus more to taste
Instructions
- Preheat oven to 350 degrees F. Grease the inside of a 9-inch x 13-inch baking dish. Set aside.
- Thinly slice potatoes, about 1/4-inch thick. You can use a chef's knife or a mandolin for more even slices. Layer the potatoes in your prepared baking dish.
- In a large bowl, stir together soup, onion soup mix, and milk until combined. Pour over potatoes.
- Tightly cover baking dish with foil and bake for 50 minutes.
- Remove foil from dish and sprinkle top of potatoes with cheddar cheese. Return to oven for 5 minutes, until cheese is melted and bubbly.
- Remove baking dish from oven and sprinkle crispy onions all over the top. Serve immediately.
