It’s getting to be Spring around these parts, and one of my favorite parts about this time of year is the potlucks and get-togethers and all the spring veggies and sides that people tend to whip out when the weather gets a little bit nicer. We adore easy salads that you can whip up in a flash and this Creamy Bacon Pea Salad is one of the ones that we keep on our list because it’s always been a crowd pleaser, just like my Deviled Eggs, and just between you and I, I secretly love myself some peas….especially when they’re paired with cheese and bacon.

When it comes to this time of year, I think we really lean towards the quick and easy meals because the weather is warming up and we’ve been literally stuck in the house for the past 6 months, so every chance that we get we migrate outside.

This Creamy Bacon Pea Salad is the perfect side dish to have when you’re firing up that grill for the first time this season, but in all honesty, we are the family who grills all year long. We can’t get enough burgers and brats and this salad isn’t just good for warm weather. It’s amazing year-round with all the things, just like creamed spinach. In my opinion anyway.

So if you are looking for a great make-ahead side dish that has minimal ingredients and takes about an hour from mixing to chilling then my Creamy Bacon Pea Salad has to be on your menu this weekend. Full of peas, bacon, cheese, mayo, and seasonings it’s super kid-friendly and family-friendly and no one will be turning their noses up at this recipe.
