Carrot cake is one of my favorite spring desserts. This year I’m taking that classic carrot cake and turning it into easy to make cookies every bunny loves! Topped with cream cheese frosting, coconut, and chopped pecans, this carrot cake cookie recipe will become a holiday favorite. These cookies didn’t even make it a day at my house. We all kept finding excuses to walk through the kitchen and snag one. Maybe it’s the best cream cheese frosting for cookies or the soft texture of these carrot cake cookies. Either way, you’ll want to make a double batch!!

Easter is one of my most favorite times of the year. I’ve always been a fan of watching my kids search for eggs or their Easter Baskets. For the last few years, we’ve been having our kids do a hunt that consisted of clues! And they absolutely love it!
They love to know that the Easter bunny went and did something special just for them, and they have just a BLAST trying to figure out where on earth the clues could be hidden and where they will end up in the end.

As easy as it is, it is fun, creative and the kids love it! What they also love is our tradition of making the perfect Carrot Cake Cookies that they can enjoy at the end of their hunt!
Full of deliciousness and topped with a smooth cream cheese frosting, these Carrot Cake Cookies are sprinkled with a little bit of shredded coconut and chopped pecans. What is easter without carrot cake? Well, we decided to switch it up a bit and turn our favorite into cookie form.

Ingredients
- 2 cups all-purpose flour
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp ground cloves
- ½ tsp baking soda
- 1 cup brown sugar
- ½ cup granulated sugar
- ¾ cup butter softened
- 2 eggs
- 2 tsp vanilla
- 2 cup shredded carrots
Frosting:
- ½ cup butter softened
- 1 8 oz pkg cream cheese, soft
- 2-3 cup powdered sugar
- 1 tsp vanilla
- Chopped pecans
- Shredded coconut
Instructions
- Preheat oven to 350 degrees F. Line baking sheets with parchment paper; set aside.
- In the bowl of a stand mixer, beat together your butter and sugars until light and fluffy. Add in your eggs and vanilla and beat until combined.
- In a mixing bowl, whisk together your flour, cinnamon, nutmeg, cloves and baking soda.
- Slowly add the flour mixture to the wet ingredients until combined. Mix in your carrots until blended.
- Roll 2 Tbs of cookie dough into balls and place on baking sheet 2 inches apart. Gently press dough down with palm until flattened.
- Bake for 15-20 minutes or until golden. Remove from oven and let cool on pan for 5 minutes before placing on wire rack to cool completely.
- Meanwhile to make your frosting in a stand mixer by beating the butter and cream cheese until smooth.
- Add in vanilla and mix until combined. Add in powdered sugar 1 cup at a time, mixing until just combined after each addition, until desired consistency is reached.
- Spread onto cooled cookies and sprinkle with pecans and coconut.
