I am SO excited grilling season is finally here. How did that happen again? Warm weather, clear skies, sandy beaches, eating outdoors, eating poolside, fresh food, hardly any cleanup, grilling season is the best! I love my arsenal of grilled main dishes from fish, steak and chicken to kabobs in every variety, but when it comes to grilling sides, I always find myself coming back to this Grilled Parmesan Garlic Bread. Its simple yet tastes sensational, takes just minutes to prep and only minutes to cook and goes with practically every meal. And best of all, who doesn’t love, buttery bread with crispy edges and a delightfully cheesy center?

To make this Grilled Parmesan Garlic bread, you first cut your French bread into nice thick slices then whisk a generous amount of melted butter with some dried oregano, basil and salt. Next, dip each side of bread into the melted butter mixture. I prefer this slice-dunking method instead of just slathering an open-faced French loaf with butter because virtually every side of the slices get bathed in butter instead of just the top surface. Which, of course means more surface area of buttery unworldly deliciousness.
Next, we grill our slices for just 1-3 minutes per side, just until toasted, watching carefully because they can burn very quickly. If you like crispier bread, you’ll want to grill a little longer, for less crispy bread, shorter.
After you grill one side of the bread, remove bread from the grill, flip over and rub the grilled side with whole cloves of garlic. This is a trick my husband learned while he lived in Italy and it works wonders at infusing the bread with garlicky goodness without leaving you with overpowering raw chunks of garlic. Next, top the bread with Parmesan and fresh parsley and return to the grill until you achieve melty Parmesan perfection and toasted smoky richness.

Shallow Bowl: I love having a set of shallow bowls on hand. They’re great for setting up a dredge station or serving your favorite pasta dishes!
Tongs: A good pair of tongs is a kitchen essential. I like having a couple sizes – a longer set for grilling and a shorter set for stovetop cooking.
Grill: This grill is my favorite little workhorse. It’s a tabletop grill that I can easily take camping, tailgating, or set it up in my backyard when I need more grill space for entertaining!
Ingredients
- ½ loaf French Bread sliced into ¾” thick slices 8 oz.
- ½ cup butter
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ¼ teaspoon salt
- 2 large garlic cloves halved lengthwise
- ¼ cup freshly grated Parmesan (or more to taste
- 2 tablespoons fresh chopped parsley
Instructions
- Add butter to a shallow bowl/dish and microwave to melt.
- Add dried oregano, basil, and salt to butter and stir to combine. Roll each slice of bread in butter mixture, turning to coat.
- Grease and heat grill to medium high heat. Grill bread for 1 to 3 minutes without turning, just until toasted.
- Remove bread from grill and rub grilled side thoroughly with garlic. Sprinkle Parmesan and parsley on the grilled side and return toast to the grill, cheese side up. Close lid and cook just until melted, 2 - 3 minutes.

Could I do this in a nonstick pan instead of a grill?

Sure. This is for those times when you’ve already got the grill hot for the rest of the meal. When you do this on a pan in the oven it will take just a slight bit longer and you’ll want to remember it’s in there!! I tend to forget and burn the bread!
