Ritz Crackers: The top and bottom of these bites are simply Ritz crackers, and you can easily make as many as you want, as long as you have two crackers for each treat.
Rolos: Grab a bag of Rolos – unwrap the candies or grab a bag of rolls without wrappers.
How to Make Rolo Stuffed Ritz Crackers
STEP ONE: Preheat the oven to 350 degrees F and line a baking sheet with parchment paper. Lay half of the Ritz crackers on the parchment paper (bottom side up), and then top each cracker with one Rolo.
STEP TWO: Bake for 3-4 minutes, until the Rolos are slightly melty and soft.
STEP THREE: Remove the tray from the oven and place a second cracker on each Rolo (the top side facing up). Lightly press the crackers together to flatten the Rolo between them, sticking everything together.
STEP FOUR: Place 1 cup of semi-sweet or white chocolate and one tablespoon of vegetable oil in a glass bowl to make these Rolo crackers more festive. Microwave for 1 minute and stir. Microwave for 30 seconds and stir. Repeat this process until the chocolate is melted and smooth. Then, dip 1/2 of each Rolo cracker into the chocolate. Add sprinkles to the chocolate side, place the dipped crackers onto the parchment paper, and let them rest until the chocolate sets up.
Tips for Success
- I like to put the bottom of the crackers facing the inside of these treats so that the “pretty” tops are facing out on both sides. If you’re not worried about whether the top or bottom is facing out, just lay them on the baking sheet—no need to take extra time to flip them over and make them match.
- Press down evenly when topping these treats with the second cracker to prevent the crackers from breaking. This will also help smush the Rolo evenly.

- 20 Rolo candies unwrapped
Instructions

- Place 20 of the Ritz crackers bottom side up on the baking sheet. Place a Rolo on the center of each cracker.
