Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
Place 20 of the Ritz crackers bottom side up on the baking sheet. Place a Rolo on the center of each cracker.
Bake for 3-4 minutes until the Rolos start to get soft and melt.
Remove the baking sheet from the oven. Carefully press a second cracker on top of each (crack top facing up) until the Rolo smushes out to the edges and sticks the crackers together.
Optional Toppings
Place 1 cup of semi-sweet or white chocolate chips and 1 tablespoon vegetable oil in a glass bowl.
Microwave for 1 minute and stir. Then microwave for 30 seconds and stir. Repeat until the chocolate is melted and smooth.
Dip half of the Rolo cracker into the chocolate. Add festive sprinkles over the chocolate, if desired. Then let the crackers rest on parchment paper until the chocolate sets up.
Notes
You can make as many of these crackers as you want. You'll need 2 crackers and 1 Rolo per treat.
