Ingredients
Cake Mix: A box of Spice Cake Mix is the flavor-filled foundation for this pumpkin cookie!
Pumpkin Puree: Don’t confuse this with pumpkin pie filling – they aren’t the same! Pumpkin puree is JUST creamy pumpkin, while the pie filling has spices and sugar already added.
Chocolate Chips: This recipe uses mini semi-sweet chocolate chips, but feel free to experiment with whatever chocolate chips make you smile.
Vegetable Oil: A 1/2 cup of vegetable oil completes this fantastic cookie.
How to Make Cake Mix Pumpkin Chocolate Chip Cookies
STEP ONE: Line a baking sheet with parchment paper and preheat oven to 350F. Combine all four ingredients in a large bowl and mix on medium speed until well combined.
STEP TWO: Scoop the cookie dough onto the parchment with a medium cookie scoop, spacing them about 2 inches apart. Bake for 10-12 minutes until the tops barely begin to crack.
STEP THREE: Take the cookies out of the oven and allow them to cool on the pan for a couple of minutes before transferring them to a wire. Repeat until all the batter has been used.
Tips for Success
- If you can’t find a spice cake mix, don’t worry! Just substitute a yellow cake mix and add 1 tsp. of pumpkin pie spice.
- Make a cream cheese & confectioner’s sugar icing and spread between two cookies for a super-duper chocolate chip pumpkin sandwich cookie!
- Make sure to get the pumpkin puree and not the pumpkin pie filling.
Can I use a boxed cake mix to make any cookies?
Adding two eggs and a 1/2 cup of oil or butter to just about any boxed cake mix will give you the foundation for a nice, chewy cookie (don’t follow the cake recipe on the box). The fun comes in creating different flavors, fillings, and shapes to get all kinds of delicious treats! You can even make different cookies from the same cookie dough starter!
Can I freeze cake mix cookies?
One of the best things about cake mix cookies is you can freeze the dough! Make your cake mix cookie dough and then divide it into portions. Wrap the portions in parchment paper, then place them in freezer baggies for up to 3 months! When you’re ready for a small batch of cookies, pull out a baggie and let it thaw for a couple of hours before baking.

- ¾ cup mini chocolate chips
Instructions
- Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper (or a silicone baking mat) and set aside..

- Bake for 10 to 12 minutes or until the tops of the cookies just begin to crack.
- Remove from oven and allow to cool on the pan for 2 minutes before transferring to a wire cooling rack to cool completely.
Notes
- If you prefer, you can use a large mixing bowl with a hand mixer to make the cookie dough.
- You can use yellow cake mix if you can’t find spice cake mix. Just be sure to stir 1 teaspoon of pumpkin pie spice into the cake mix before proceeding.
- Don’t use pumpkin pie filling. It’s already spiced. You’ll get an overload of baking spice flavors that’ll ruin the cookies.
