Strawberry salads are a great summer salad. They work as a side dish to any meal or as a light lunch! The fresh strawberries with the bacon, in this Spinach, Bacon and Strawberry Salad will have you making this salad all the time.
We went strawberry picking the other day with our little monkeys It was great to get out as a family and stroll through the fields with our buckets and pick tasty little bites. We are a strawberry loving family for sure! If I get busy and don’t know what I’m going to make for dinner I will usually grab some frozen chicken sausage out of the freezer and cook that up for the boys and slice some fresh strawberries. Not totally balanced but better than fast food, and tastes better too! A common problem that people leave when they go strawberry picking is the need to find something to do with ALL THOSE STRAWBERRIES! I think it’s the size of the buckets. You sort of go into a strawberry picking zone and you just keep going down the rows and filling your bucket. Then you find yourself driving home with 20 pounds of strawberries. Maybe not 20 but close, let’s say 15. 🙂
One thing I love to do when I have an over abundance of strawberries is to add them to salads. This time we ate a ton of them and then made Strawberry & Lime Freezer Jam and Strawberry Pie Ice Cream. I also made this Spinach, Bacon and Strawberry Salad. It was so tasty with the Poppy Seed Dressing I made a couple of weeks ago! The sweetness of the candied walnuts and the strawberries with the onions and bacon was just awesome! I love that fresh summer flavor in my salads. I felt like i was eating a dessert for my salad. It was a big hit and I was even able to get the kids to want to eat salad! AH-MAZING!!!
Ingredients
Candied Walnuts
- 1 cup walnuts rough chopped
- ¼ cup brown sugar
- 1 tbsp butter
Spinach, Bacon and Strawberry Salad
- 5 cups baby spinach
- ½ to 1 cup candied walnuts
- ½ cup bacon crumbled
- ¾ cup purple onion chopped
- ½ to ¾ cup strawberries
- Poppy Seed Dressing to taste
Instructions
Candied Walnuts
- melt butter in a skillet over medium heat
- add walnuts and brown sugar and stir constantly
- once all the sugar is melted and walnuts are coated pour onto a baking sheet and spread out
- allow to cool
Spinach, Bacon and Strawberry Salad
- in a large bowl toss baby spinach, candied walnuts, bacon, onion, strawberries and dressing
- serve and enjoy!
