POMEGRANATE CHIA SEED PUDDING is an easy and healthy dessert idea that uses the power of chia seeds for a rich and creamy texture you will love!
I distinctly remember seeing Chia pudding floating around Pinterest a few years ago and thinking, ‘umm NO’. First of all, I had absolutely no idea what Chia seeds were, much less where I could buy them. The whole concept seemed like a hippy-dippy idea that wouldn’t taste good at all. I snubbed my nose at it and went on my merry way. It was a year or so later that I discovered chia seeds at my local food coop and figured I would buy a pack. That chia pudding I saw a while back was the first thing I thought I would try with them.
I had very low expectations going into the experiment, but I am always on the hunt for a healthier way to enjoy dessert, so I figured it couldn’t hurt to try. To my amazement, this stuff actually tasted great! It was like a light tapioca pudding consistency, with the fresh flavors of fruit. I was sold!
Over the years I have put my own spin on chia pudding and played around with a variety of concoctions. From peanut butter and chocolate to this pomegranate chia seed pudding, it is a great way to make a fun and guilt-free treat for kids and adults.

Ingredients
- ⅔ cup pomegranate juice
- ½ cup light coconut milk
- ¼ cup chia seeds
- ⅓ cup non-fat plain Greek yogurt
- 1 tablespoon honey
- 2 kiwis peeled & chopped
- ⅓ cup pomegranate seeds
Instructions
- Mix the first five ingredients in a small bowl. Cover and refrigerate for at least 4 hours. Enjoy chilled topped with the fresh fruit.
