CHEESY BUFFALO CHICKEN QUESADILLAS are an easy 10-minute dinner idea that only requires five ingredients for a delicious recipe you will want to make again and again!
Life is so crazy busy right now, I just don’t have the time or energy to slave over a stove after I get home from work. Easy meals I can throw together at the last minute are what I live for. These Cheesy Buffalo Chicken Quesadillas are no exception!
I use a store-bought rotisserie chicken that is already skinned and cubed up for extra convenience. Toss some of the chicken on a tortilla, top with your favorite buffalo sauce, some crumbled bleu cheese, and some shredded cheddar for an easy 10-minute recipe you will love!
If you aren’t a big bleu cheese fan, you can skip it entirely or swap it out for a little ranch dressing. This gives the spicy buffalo sauce a little balance with the cool creaminess. You could also toss some celery or green onions in these quesadillas for a more robust meal. No matter how you make them, I guarantee they will be a delicious weeknight dinner you keep coming back to!
Ingredients
- 1 10" tortilla
- ⅔ c. cooked and cubed chicken
- 3 Tbsp. buffalo sauce
- 2 Tbsp. bleu cheese crumbles
- ⅓ c. shredded cheddar
Instructions
- In a small bowl, toss the chicken with the buffalo sauce and bleu cheese. Spread the chicken mixture across half of the tortilla. Top with the shredded cheese and fold in half.
- Spray the outside of the tortilla with non-stick pan spray and add to a heated skillet on medium heat. Cook the quesadilla on each side for 2-3 minutes or until golden brown. Serve immediately.
