Garlic Roasted Shrimp with Spinach Artichoke Pasta is crazy good!!! I started out knowing that I wanted to make a shrimp and pasta dish but didn’t really know what I wanted to do beyond that. Then I started thinking about spinach artichoke dip and I realized that’s what this dish needs. Who doesn’t love that warm creamy dip? It’s delicious and always goes fast when you make it for a party.
Shrimp and pasta dishes usually come together pretty fast and so they’re great for busy nights when you just don’t have the energy or desire to be in the kitchen for long. The shrimp is done in just 8 minutes and the pasta is too. The longest part of making this dish is waiting for the water to boil!
Ingredients
Garlic Roasted Shrimp
- 1 lb. of shrimp peeled and deveined
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp pepper
- ½ tsp garlic powder
Instructions
Roasted Garlic Shrimp
- preheat oven to 400 degrees
- line a baking sheet with foil
- toss shrimp, olive oil, salt, pepper and garlic powder together
- spread shrimp out in an even layer and place in the oven
- roast for 8-10 min or until shrimp are cooked through
- remove to a plate to wait for pasta
Spinach Artichoke Pasta
- cook pasta according to directions on package
- in a large skillet heat olive oil over med heat
- add onions and cook for 2-3 minutes or until translucent
- stir in garlic and cook for 1-2 min
- add in artichokes and spinach (this may seem like a lot but it cooks WAY down)
- season with salt and pepper
- once the spinach has cooked down, stir in the Parmesan cheese
- add pasta to a large serving bowl
- add spinach mixture to the pasta and toss
- place the shrimp on top and serve

I used two small jars of marinated artichokes and skipped the garlic in the onion mixture. Also used spaghetti squash instead of pasta. Delicious!
