I think summer is officially here. What do you say? I do not know about you, but when it’s hot outside there is no way I’m using the oven or stove. All meals must be either cold, meaning no cooking involved, on the grill, or in a slow cooker. Even then, the food can’t be too hot because it upsets my stomach.
And that’s where all kinds of salsas and salads come into play. Every year we have a garden and grow all of the vegetables needed for homemade salsa, but this year it’s not happening. We tried, but we have been getting these huge groundhogs, and they have been eating everything! So I gave up. It’s a shame because we can go through some salsa.

Have you ever had a fruit salsa before? If you haven’t, you have to make this watermelon fruit salsa. It’s sweet, spicy, and all-around delicious. It’s one of my favorite refreshing healthy snacks recipes on a hot day outside and fabulous when sharing it outside on the deck with friends and family. Sounds like the perfect summer evening to me! We like this salsa best served with tortilla chips, but it’s also great served on top of chicken or pork!
This watermelon fruit salsa is summer in a bowl. Not too many ingredients are needed, and most will have already have them in their refrigerator and pantry during the summer – watermelon, jalapenos, limes, salt, fresh mint, green bell peppers. Maybe not the mint, but I do because it’s great when muddled into a glass of water. So good!
Ingredients
- 4 cups deseed watermelon diced into small chunks
- 1 jalapeno deseeded and finely diced
- ½ cup green bell pepper finely diced
- ½ cup chopped mint
- 4 tablespoons lime juice
- pinch of salt
- tortilla chips to serve
Instructions
- Place the watermelon, jalapeno, green bell pepper, mint, lime juice, and salt in a medium bowl and mix together until combined. Cover with plastic wrap and place in the refrigerator for 15 minutes.
- Uncover and serve with tortilla chips.
