Are you ready for some football!? You will be after you taste these Slow Cooker Buffalo Chicken Lettuce Wraps!
Football season is upon us and the boys at my house can’t wait. My husband and two sons are big college football fans, I mean BIG! Each year they have a boys football weekend where they fly somewhere to attend a college football game or two. This year they are headed to Michigan where they will get to see the Oregon Ducks and the Oregon State Beavers both play different Michigan teams, on the same day in two different games. They are pretty much in heaven!
Football watching food goes right along with football watching at our house. Buffalo Chicken Wings tend to be a favorite at our house so I thought I would give it a little bit different spin and make it a little bit easier and healthier with slow cooker buffalo chicken lettuce wraps.
It is simple to make ahead of time and have it ready for when the football fans are ready. I like to cook my chicken in a slow cooker and you can read more about my slow cooker shredded chicken here. Just be sure not to overcook your chicken in the slow cooker or it changes the texture. I make up large batches of it and just keep it in the freezer and then you are always ready for those football watching fans!
After I shred the chicken I cover it with a combination of Ranch Dressing and Hot Wing Sauce. I do a 1:1 ratio but if you want it a little hotter increase the hot sauce or milder, increase the ranch dressing.
I like to serve them inside of lettuce leaves and add some crumbled blue cheese. Of course, if your football fans need their carbs these can totally be served on a bun or bread. I’m sure this recipe will become part of your best crock pot recipes collection!
Ingredients
- 4 C shredded chicken
- ¾ C Frank's Red Hot Wing Sauce
- ¾ C Ranch Dressing
- lettuce leaves
- crumbled blue cheese
- salt and pepper
Instructions
- Mix wing sauce and dressing together.
- Add to shredded chicken
- Place chicken on lettuce leaves
- Top with cheese
