I ate a lot over Memorial Day Weekend, and I mean A LOT! So, it’s time to get serious and start making some tasty summer salads! I have a few lined up for my weekly menu, so stay tuned for more great salads! We love shrimp, so I figured Shrimp Salad would be a great lunch for the kids and me. I love being able to eat lunch with both kids every day, now that they are on summer break. Shrimp Salad is delicious and creamy, with the perfect amount of spice and crunch. The kids LOVED it and said it was, “awesome, delicious, and amazing” and asked that I make it again soon. I served it on a bed of lettuce, but it would also taste great on a sandwich. This salad is quick and easy to make and is perfect for summer! I found the recipe here and added some cucumber since we love it so much.
- Remove the tails from the shrimp
- Cut the shrimp in half
- Combine shrimp with remaining ingredients and mix well
- Chill 1 hour
- Serve on bed of lettuce or sandwich roll
