Summer Bounty Salad is a delicious way to enjoy your summer garden’s harvest. Grilled zucchini and squash are tossed with crisp romaine and Jazz apples for a delicious salad!

Living in Portland we get to experience a lot of great food and restaurants. There’s a farmer’s market happening in just about every town weekly and the restaurants nationally known. We love to eat and hang out as a family while we try all the new (to us) places to eat and it was on once of these trips that I had a Summer Bounty Salad. The salad I had was different from this salad except for the grilled zucchini and squash. Until I tried had that salad I’d never thought about adding grilled veggies to a fresh salad before. Now, I can’t believe that I didn’t. It just seems to fit so well.
One of the things I love about salads is the variety of flavors and textures in one dish. There is crispy and crunchy, sweet and salty, fresh and grilled all in one bowl!!! This salad is killer and one thing I can’t live without in my salads in the summer is apples. I love the addition of a quick sweet bite with a crunchy, crispy texture.
I recently tried these JAZZ apples and they are fantastic!!! I was out of town when they got to my house so I had my husband bring me some out to California when he met me out there. I shared with my parents and we all loved them! We always have some kind of meat and cheese tray at my Mom’s house so we sliced one up and had it with our snack and they were gone FAST!

- 4-5 cups chopped Romaine lettuce
- 2 cups of Super Simple Grilled Veggies chopped
- 1 cup chopped English cucumber chopped
- 2 cups Jazz Apples chopped
- 1 cup fresh parsley roughly chopped
- 1/4 cup sliced almonds toasted
- **Super Thick and Creamy Blue Cheese Dressing
- combine all ingredients in a bowl, except the dressing and toss
- add your favorite dressing and toss again
