Take the work out of your St. Patrick’s Day party with this No Fuss St. Patrick’s Day Party Food!

If I’ve said it once, I’ve said it a million times! I think the best way to get ready for a party is with very little work. When I was first married and starting to have friends over for dinner I’d make a big production. I’d make an all from scratch meal with sides and appetizers. I’d also be stuck in the kitchen while everyone had fun. No thank you! I remember watching Ina Garten one day and she was talking about making sure to keep it simple when entertaining and it was like a light bulb went off!!!
My friends were coming over to see me, not to have an elaborate dinner. Don’t get me wrong I’ll still cook for my friends and family but I mix in easy items that don’t take a lot of preparation or cook time.
For St. Patrick’s Day I want to go super simple and I think this spread is perfect! I scoured the grocery store for items that would fit and brought them home. I’m super happy with my selections!
The veggie tray has to be green, right?! I went with English cucumbers, broccoli, and green bell peppers. I like the English cucumbers better than regular because of the skin. It’s not as thick and doesn’t have that waxy feel. For the broccoli I went super no-fuss and bought a bag of florets. All I had to do was cut down some big guys to make them more bite-sized and I was good to go! The bell peppers were fun! I cut them, starting at the bottom, in rings. I love the clover type shape they make. When you’re picking out your peppers look at the bottom and make sure that you see four little “legs” (what do you call that) on the bottom and not three, so that you get a good clover shape.
I grabbed a container of some yummy guacamole while I was at it to dip the veggies into. This is my latest kick. I’ve love to dip my veggies into guacamole for a snack during the day. I’m at my computer a lot during the day and I’m a fidget. This basically translates into me wanting to snack or chew all day long. If I keep veggies and pre-made guacamole in the fridge I do much better and I don’t raid the cookies in my pantry.
Next was my meat and cheese plate. I always have meats and cheeses when I have friends and family over! You can make so many people happy with a little variety of meat and cheese. For the No Fuss St. Patrick’s Day Party Food I had to have corned beef. I just hit up the deli and laid it out on the cheese board in little folds.
Next, I went with some green olives stuffed with blue cheese. (I can’t get enough cheese.) I made sure to get some grapes on the board and of course I had to go with green grapes. Then I sliced up some Dubliner cheese and laid that out. I decided to slice it instead of leaving the brick of cheese out with some slices because I’ve noticed that most people are more willing to pick up a slice of cheese if they don’t have to work. When they can just grab a slice and keep on talking they’ll be happy.
When I was checking out the cheeses I found this cheddar with a green wax rind. There was no way I was passing this up!!! I did lay the entire wedge of cheese on the board this time because, duh, green rind, but I chipped lots of little nibbles off for people to grab. This cheddar was a garlic herb cheddar and very tasty!
Now! For the part I got super excited about. You know when you have a plan but then when you lay it out it’s even better than you imagined! I tried the GOOD THiNS Snacks this week and LOVE them!!! I decided I wanted to lay some out for my No Fuss St. Patrick’s Day Party Food and I knew they’d be a hit because they taste amazing but, you guys!!! They totally looked like gold when I laid them out. I put them in a small bowl and then laid more out on my (clean) counter to look like gold over flowing. It totally pulled the whole table and theme together!
Have you tried GOOD THiNS Snacks yet? I ended up buying all the flavors I could find at my Alberton’s. I have GOOD THiNS Sweet Potato, GOOD THiNS Chickpea Garlic and Herb, GOOD THiNS Potato Spinach & Garlic! My husband and I can’t stop snacking on them! They tastes so good! You can find them in the cracker isle but I also found mine on an end cap. I like that they have ingredients I can pronounce and of course, the taste makes them super easy to eat! 🙂
