I can’t believe Thanksgiving is this week. This year is flying by so fast and Christmas is just around the corner. I am so glad my parents are here this week to celebrate Thanksgiving and enjoy a wonderful week with us. My mom and I have a lot of fun cooking all the food together and the kids are excited to help us in the kitchen this year! All of the yummy sides are my favorite part of the meal and I absolutely love mashed potatoes! Another amazing part of all the delicious food is the outstanding leftovers! {Leftover} Mashed Potato Puffs are a great way to use all the leftover mashed potatoes and turkey. They are tasty, cheesy, easy to make, and work great with eggs for breakfast or as a side dish.

Ingredients
- 2 cups mashed potatoes
- 3 eggs beaten
- ¾ cup grated Parmesan or Gruyere divided
- ¼ cup minced chives
- ¼ cup diced turkey
- Salt and freshly ground pepper
Instructions
- Heat the oven to 400°F and lightly grease the cups of a regular muffin tin, or a mini-muffin tin
- Whisk together the mashed potatoes, eggs, 1/2 cup of cheese, the chives, and turkey
- Taste and season, if necessary, with salt and pepper
- Put a spoonful of the mixture in each muffin cup
- Sprinkle the top of each potato puff with grated cheese
- Bake for 20-25 minutes, or until the potato cups are set, browned on top, and hot through and through
- Serve immediately
