Jalapeño Popper Quesadillas have all the jalapeño and bacon flavors of a popper in a fun package that’s perfect for dipping! These little bites make a delicious summer appetizer and can also double as a meal!
So I know I’m lucky…and don’t hate me…but I have the BEST neighbors. Seriously, I’m not sure how I hit the jackpot, but I definitely did. Not only can I count on them for help (and an occasional cup of sugar), but I genuinely love spending time with them! And now that summer is here, I have one thing on my mind: all the summer fun we will have….{literally} right in our own backyard! I’m envisioning pitchers of sangria and neighborhood gossip for days. Does anyone want to join me??
It’s the perfect situation, really. Because as much as I love my neighbors, my kids love their kids. And if I’m up for hanging out, so are they! Many a summer afternoon has been spent with them, and it’s not uncommon for us to still be hanging out at dinnertime. This is exactly why we need these Jalapeño Popper Quesadillas in our lives! They’re so quick and easy to make, and perfect as an appetizer or even dinner! (Trust me – you’ll eat so many of them, you won’t even be hungry for whatever dinner you had planned!) And you won’t even be sorry about it.
These quesadillas are all loaded up with 2 types of cheese, bacon, jalapeños, and crispy bread crumbs. If you like jalapeño poppers, you will LOVE this fun twist! I like to leave it spicy, but for those of you worried about heat, just remove the jalapeño seeds and you’re good to go. All set for summer fun with neighbors, or summer snacking in your own backyard. Either way, these Jalapeño Popper Quesadillas are where it’s at. Now let’s get out there and enjoy them!
Ingredients
- 2 8" tortillas
- 1 oz. cream cheese
- 1 fresh jalapeño sliced
- ½ c. shredded colby jack cheese
- 4 pieces bacon cooked and chopped
- 1 Tbsp. panko bread crumbs
- 1 Tbsp. olive oil
Instructions
- Prepare quesadillas by spreading one tortilla with cream cheese; top with jalapeños, shredded cheese, cooked bacon, and panko bread crumbs.
- Place other tortilla on top.
- Heat 1/2 Tbsp. olive oil in a large frying pan.
- Cook tortilla over medium heat until golden brown on one side.
- Add remaining oil and flip; cook until both sides are golden brown.
- Serve as is or with sour cream & salsa.
