If you’re like me and end up at a million backyard parties over the summer, you always have to take something to share with everyone, right? But it gets so hot and who wants to spend hours in the kitchen when you could be sipping margaritas, so it has to be something simple to make.
Things couldn’t be any simpler than these Mini Egg Salad Sliders. Seriously, you can feed an army with them and the best part is that they taste much better if you prepare the egg salad the night before. I always take these and on the rare occasion when someone asks me to bring dessert, it’s guaranteed that another person will ask me where the egg salad sliders are.
I just can’t win!
Three ingredients are all it takes if you don’t count the salt and pepper. You can boil the eggs yourself which takes about 14 minutes in a pot of boiling water or buy eggs that are already boiled. Almost all grocery stores carry them, they’re perfect for snacking on and my kids love them in their lunch boxes. Add some mayonnaise and pickle relish and you have one of the best egg salads you’ll ever taste!
Another bonus to making egg salad is that you can personalize it to your own tastes. I love to add cheese and a splash of hot sauce, or maybe some fresh chopped herbs like rosemary or tarragon. Lay it on some of your favorite bread and you have an awesome lunch, or take off on a picnic somewhere with some wine, chips, and your egg salad sliders.

Ingredients
- 8 hard boiled eggs
- ½ cup mayonnaise
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 tablespoons pickle relish
- 8 mini hamburger buns or brioche buns sliced in half
Instructions
- Place the boiled eggs in a bowl and mash with a fork.
- Add the mayonnaise, salt, pepper, and relish and gently fold through until well mixed.
- Divide the egg salad between the rolls.
- Serve at once or keep the salad in the refrigerator until you're ready to use.
