Chili, cheese, tiny potatoes….these Chili Cheese Potato Bites can’t really get much better. Last year we made Irish Potato Bites to celebrate St. Patrick’s Day and they have been a huge hit. People love those little bites of corned beef goodness but, you can really only get me to make corned beef once a year (much to my guy’s dismay) so they are more of a special holiday treat than a must-have appetizer. These Chili Cheese Potato Bites take that same tiny potato magic and turn it into something that you can serve all year long!
Chili Cheese Potato Bites start with the smallest potatoes you can find. My grocery store sells small red potatoes and golden potatoes. I’ve used both varieties and they are both delicious. You start by par boiling the potatoes until they are fork-tender. When they are ready remove them from the water and let them cool off a bit before cutting each one in half and scooping out the inside. I found that a teaspoon was the perfect size to scoop out the inside of my potatoes, sort of like an ice cream scooper. You can try the same or just use a regular old spoon, either way you’ll want to scoop out enough to make a nice hole to fill with chili and cheese. Oh, and I have a tip! To help your potatoes sit up nicely so they don’t spill out all of the delicious chili and cheese you’re going to fill them with you can slice off just a little bit of the rounded bottom of the potato to make a flat surface for it to sit on.
Once your potatoes are all scooped and ready to go fill each one with chili. You can make this super simple by buying canned chili, or you can make your own favorite chili recipe like our awesome Pale Ale Chili, it is totally up to you. Fill each potato with a scoop and then place them on a baking sheet and pop them in a 400 degree F oven for about 10 minutes. Right before they are ready to come out of the oven microwave your American cheese until it is nice and smooth. Pull the potatoes out of the oven and drizzle the cheese all over them.

Ingredients
- 20 Potatoes small (golf ball size)
- 2 c Chili
- 1 c American Cheese
- Salt
- Sour Cream for garnish
Instructions
- Fill a large pot with water and bring it to a boil.
- Add potatoes and boil until they are fork tender.
- Preheat oven to 400°F
- Once potatoes are cooked and have cooled cut each one in half and cut a small slice off of the rounded end so the potato can sit up.
- Scoop out the inside of each potato.
- Sprinkle a little pinch of salt inside each potato half, fill with chili and place them on a baking sheet.
- Place baking sheet in oven for 10 minutes.
- Remove potatoes from oven and melt American cheese in microwave until it is smooth.
- Drizzle cheese over each chili filled potato.
- Top with a dollop of sour cream and enjoy!
