Chicken and Vegetable Quinoa Bowl with a Kick is a delicious protein and flavor packed dinner or lunch!
It’s warming up and that means bikini season is just around the corner. Who am I kidding? I haven’t had a bikini on in just about a decade. At least not one that didn’t have the word tank in the beginning. I’m so excited that one piece bathing suits are so cute now! When things start to warm up I start to think of having to show more arm rather than my mid drift. I’m going to be heading out to Las Vegas in September with some heart family to help them celebrate their 25th wedding anniversary and I want to look my best. Beyond that, I really just want to feel my best.
I’ve gone back to doing Weight Watchers. I did the program in the past with a lot of success but I wasn’t ready to make any long term changes. Living in Oregon I have access to some really great, fresh and healthy food that I find myself making better choices because I want to. That’s not to say that you won’t find some seriously decadent and sinfully good food here at Real Housemoms. That’s what I like about Weight Watchers, you don’t give that food up all together, you just plan for it and make changes throughout your week if you’re going to indulge. I always tell you the truth here on Real Housemoms but I feel like I should point out this isn’t a paid post or review, I’m just letting you know what I’m up to. Joining Weight Watchers inspired this dish.
When you first start you do a Simple Start plan. There is a list of foods that you can eat from and with no measuring and tracking. Everything in this dish is on that menu. There is a lot of protein in this dish because it helps to keep you feeling full longer. Let me tell you it tastes awesome too. Food has to taste good and get me excited to eat it or I will never stick to a plan. Not only that, but dinners have to be good enough for the entire family to eat. There is no way that I want to turn into a short order cook and make a different meal for everyone. This dish is perfect for a family. Growing up in Arizona means that my kids can handle a bit of heat, nothing big but sort of standard salsa level heat. If you aren’t big on the heat you can substitute a can of regular diced tomatoes instead of the kind with the chilies. The regular tomatoes come in a slightly bigger can, just use them all don’t worry about the 4 or 5 extra ounces. I like to make this with the {Busy Weeknight} Chicken that I shared with you. It helps turn this meal into a super fast dinner idea!
Ingredients
- 2 cups chicken broth
- 1 cup uncooked quinoa
- 1 tbsp olive oil
- 1 onion sliced
- 3 garlic cloves chopped
- 2 zucchini sliced
- 1 yellow squash sliced
- 8 cups fresh baby spinach
- 10 oz can diced tomatoes with chilies
- 2 cups of {Busy Weeknight} Chicken cooked and thinly sliced
Instructions
- bring chicken broth to a boil
- add the quinoa to the broth and bring back up to a boil cover and allow to cook for 12 minutes
- remove from heat and fluff with a fork then recover and allow to sit for 15 minutes
- heat olive oil in a large skillet over medium heat
- add sliced onions and cook for 203 minutes
- add in the garlic, zucchini, yellow squash and tomato with chilies and stir
- season with salt and pepper to taste
- add in the baby spinach and cover
- cook until the spinach wilts
- place quinoa in a bowl or plate and top veggies then the chicken slices
- enjoy!
