BOOZY STRAWBERRY BASIL LEMONADE POPSICLES are the best way to cool down after a long hot day! Everyone loves a popsicle and these are the BEST!
Have I told you lately how much I love being an ambassador for Pearl Vodka lately? I got a surprise delivery of Strawberry Basil Vodka and couldn’t wait to come up with a yummy drink that would be the cherry on top of this crazy awesome summer I’m having! I love the infusion of herbs with fruit in a cocktail. Thyme Berry Sparkler was my go to drink last year around New Year’s Eve, so I knew I was going to be a huge fan of Pearl’s Strawberry Basil Vodka! I had a sip or two to get the creative juices flowing and then inspiration struck!
Everyone loves popsicles!! I mean they’re frozen bars of goodness. As kids, once we’ve had our first taste of a popsicle we are trying to get another as soon as the heat of summer hits. This year my son realized that you can make them at home and he’s been asking me almost everyday to make some. For the kids we went super simple and made frozen pudding pops, chocolate of course, but mom and dad need a special treat in the summer too! So, Boozy Strawberry Basil Lemonade Popsicles it was!
They’re so simple to make! I just had to be careful with my vodka pour. I tend to be a little heavy handed as a bartender. The only time that’s a problem is when making popsicles with alcohol. Alcohol won’t freeze in your home fridge so it has to be diluted with other liquids. The ratio is 1 cup of liquid to 1 1/2 oz. of liquor. So I say even if you don’t think all of the popsicle mixture will fit in your molds make it up and then just drink the leftovers! Problem solved. 😉
I loved taking a bite of the popsicles when they were finished freezing!! They were frozen but the inside was sort of a slightly softer freeze, super good. I started to get creative though. I mixed up a cocktail with tropical juice and a shot of the Strawberry Basil Vodka, then instead of ice I put a popsicle in my cup and let it slowly melt. OH. MY. GOOOOOOSH! It’s a must make this summer before the warm weather disappears! I’m in love!
Ingredients
- ¾ cup sliced strawberries
- 3 oz. Strawberry Basil Pearl Vodka
- 2 ½ cups lemonade
Instructions
- puree strawberries w/ lemonade
- pour in the vodka and stir
- pour equal amounts into popsicle molds
- freeze overnight
- run mold under hot water just long enough to be able to pull the popsicle out of the mold.
- enjoy!
