BLACKBERRY COBBLER is such an easy dessert to make! If you can make pancakes you can make this cobbler recipe! It tastes amazing and will impress all you guests.
We’re getting ready to do some more camping this summer. We did a few days on Orcas Island off the coast of Washington and now we’re doing some lake and beach camping around Oregon! We’re so excited! This time around we’re renting an RV for a new experience and the kids can’t wait! They started their camping adventure in the driveway the night we brought home the RV to get it ready for our trip. It’s going to be so much fun and so beautiful. I can’t get over how amazing the Pacific Northwest is. Every place we go is just spectacular. One of our favorite spots is Cannon Beach but this time we’ll be heading up to Manzanita beach. We’re also going to do a few days at Lost Lake and then we’ll head south to Crater Lake. With all the camping we’re doing I have been doing a little make ahead cooking to get ready. I love cooking by the campfire but I don’t want to spend all my time getting dinner ready so I definitely like the make ahead strategy. I love s’mores for dessert and so does the rest of my family. My youngest son likes to light his marshmallows on fire but he doesn’t like to eat the burnt part (the best part) so he gives that to me then he uses the inside of the marshmallow to make his s’more. It’s a win/win for all. 🙂 Now, while I do love s’mores I also like variety and so I decided to make up individual Blackberry Cobbler treats for us to take along. I love how they look in their little dishes and they’ll be easier to store and pack into the little fridge on the RV instead of a larger dish.
Of course I had to taste it as part of my quality control duties before we go. No sense bringing on a dish that just isn’t right, right? So I can tell you that this dessert is amazing! My husband and I both had one before we left and it was amazing!! We topped it with some vanilla ice cream and it was gone in seconds. I love that it was so crazy easy to make. You simply toss the berries in sugar, place them in the ramekins and then top with the super simple batter. This batter is close to a pancake batter and just as easy to make. When you cook this dish it comes out with a cakey top and the sweet bubbly juices of the blackberries seep up. Then underneath is the warm sweet fresh blackberry goodness. I will be making this dessert over and over again for sure!!!
Ingredients
- 1 cup flour
- 2 tsp baking powder
- ½ tsp salt
- 1 cup milk
- ½ cup butter melted
- 2 tsp vanilla
- ¾ cup granulated sugar divided
- 3 cups blackberries
Instructions
- preheat oven to 350 degrees F
- in a medium mixing bowl whisk together flour, baking powder, salt and 1/2 cup sugar
- pour in the milk, butter and vanilla and stir until combined.
- in a smaller bowl toss blackberries with remaining 1/4 cup of sugar
- even divide berries into 6 ramekins
- cover berries with an equal amount of the milk/flour batter
- place ramekins on a baking sheet and into the over for 40-45 minutes until topping is golden brown and blackberries are bubbling
- top with ice cream or whipped cream and enjoy!
