As long as I can remember, I have struggled with what to make for a side dish. You see, I love coming up with the main dish & that is always my main focus. The main dish is my gig, it’s what I love. The other is, well, secondary. Personally, I don’t crave or feel like I need all the other stuff because I’m perfectly satisfied after the main dish is gone. If I were cooking for just myself, I would eat one main dish & call it good. But my hubs, he grew up with 3 items on the plate. Every meal had the main course, a vegetable & a starch side dish. It took a long time to get used to this. But after all these years I have come to accept that it’s just how dinners are in this house. We have a complete dinner, to put it in his words. So I spent a lot of time in the early years combing through the old family cookbooks & perfecting certain dishes. This black bean pilaf is one of them.
I love the idea that I don’t have to buy the box mix to make this. These are all ingredients I always have on hand & it comes together so quickly. It’s literally so easy that most of the time I leave this dish to my kids to make while I work on whatever main dish we are creating to go with it. I really love that because it teaches them some self-confidence in the kitchen AND takes a bit of the dinner prep off my hands. Plus they really love to share that they are the ones that created part of our meal. Now this rice, it’s divine. That deep simmered in beef flavor mixed with the freeze-dried bell peppers truly makes me crave each & every bite. For someone that really doesn’t do side dishes, this one really grabs me. That honestly doesn’t happen very often, but I just kept coming back for more.
I don’t know if it was because it’s so warm & comforting, or because of the hearty flavor. But it’s certainly a dish we have often around here because it’s loved so much. In just a few minutes you can have homemade black bean rice pilaf that is perfect alongside the everyday dinner or shared at a special gathering like the holidays. I know we love to serve these old family recipes at our large get-togethers as often as we can. This is hands down the easiest & most delicious rice pilaf we have ever made. It keeps bringing people back to the kitchen for more.
Ingredients
- ¼ cup butter
- 6 ounces amen noodles crumbled into small pieces
- 2 cups hot water
- ½ cup beef broth
- 1 cup white rice
- ¼ cup canned black beans- drained & rinsed
- 1 tbsp onion flakes
- 2 tsp granulated garlic
- 1 cup freeze dried bell peppers
- salt pepper to taste
Instructions
- Melt butter in a skillet over medium heat
- Add broken noodles & cook until slightly brown
- Add bouillon, rice, seasonings & water
- Cover & cook over low for approx 20 minutes or until rice is cooked
- Add freeze dried bell peppers
- Stir gently & serve
