Salsa Base: Sliced black olives, fresh grape tomatoes, diced jalapenos, green onions, and a jar of marinated artichoke hearts are the 5-ingredient foundation for this fabulous salsa!

Herbs & Spices: Minced garlic, fresh chopped basil, and salty capers add tons more flavor to this Mediterranean “caviar”!

Seasoning: After all those other strong flavors, a simple sprinkle of salt and pepper will do the trick!

How to Make Artichoke Salsa

STEP ONE: Chop and slice the veggies and herbs. Mix the artichoke hearts, 2 tablespoons of marinade, olives, tomatoes, garlic, basil, capers, green onions, and jalapeno in a large mixing bowl. Season the salsa with salt and pepper to taste.

STEP TWO: Cover the bowl with plastic wrap and chill in the fridge for at least 1 hour before serving. That’s it! Enjoy!

Tips for Success

  • You CAN substitute plain artichoke hearts for the marinated ones, but you’ll need to add olive oil and seasonings for more flavor.  
  • If the outer leaves of the artichokes seem tough to chop, simply remove them. 
  • Serve with tortilla chips, pita chips, or crackers.
  • To simplify even more, toss all the ingredients into the food processor and pulse lightly to chop. Don’t overmix, or it will become a paste instead of having lovely little pieces of everything.
  • You can substitute almost any single ingredient (except the marinated artichokes!)—black beans instead of olives, red bell pepper instead of tomato, or oregano instead of basil. Of course, the flavor changes, but the result is still yummy!

How Long Will Artichoke Salsa Last?

Homemade Artichoke Salsa, if covered and stored in the fridge, should easily last 4-5 days. The fresh ingredients will lose moisture as they sit, so drain the excess “juice” in the salsa bowl each time before serving. You can also add a squeeze of lime juice to brighten up the leftovers.
