These APRICOT BRIE BITES are a great appetizer for your New Year’s Eve party this year! They are easy to make and taste so delicious!
I love Brie so, so, so much! There is something about the gooey cheesiness of it that makes it beyond delicious. These Apricot Brie Bites are my favorite way to enjoy Brie. They only require three ingredients and the flakiness of the puff pastry adds to the awesomeness.
I make a Carmelized Pecan version of these and they are equally amazing. These would be a great appetizer for a holiday party or family get-together!
These bites are so good I’ve even put them on our Super Bowl menu! They not be your “standard” football food, but any appetizer that disappears almost as fast as you can make them is go in my book!
Ingredients
- 2 sheets of Puff Pastry
- 1 {6 oz} wheel of Brie with the casing removed {This is easier to do if it is frozen in the freezer for 15 minutes. Just us a knife and scrape it off.}
- ½ cup apricot preserves
Instructions
- Preheat oven to 350ºF and grease a mini muffin tin.
- Let the Puff Pastry thaw according to package directions and then cut each sheet into 9 pieces. Shape the squares into the muffin tins.
- Cut the brie into 1-inch pieces and place one each of the puff pastries.
- Top with about a teaspoon of apricot preserves.
- Bake for 10-13 minutes, or until Puff Pastry is lightly golden.
