Ingredients
Salmon: For each individual salad, use a boneless, skinless filet. Fresh, wild-caught salmon is ideal, but thawed, patted-dry, frozen salmon can also work.
Salmon Marinade: The marinade for the salmon shares many ingredients with the salad dressing – lemon juice, olive oil, minced garlic, oregano, and a dash of salt and pepper give the filets so much depth of flavor!
Salad Veggies: This salad is so crispy, crunchy and fresh! It’s filled with Kalamata olives, cucumber, cherry tomatoes, avocado, red onion on a bed of spring mix. Amazing!
Salad Dressing: Again, use olive oil, lemon juice, and minced garlic, but add red wine vinegar, Dijon mustard, and a healthy sprinkle of oregano. You’re going to love this!
How to Make Salmon Salad
STEP ONE: Preheat the oven to 400 degrees F. Line a baking sheet or dish with foil and set it aside. Then, whisk together the marinade ingredients in a small bowl until well mixed.
STEP TWO: Place the salmon in the baking dish and pour the marinade over it. Bake the salmon for 12-15 minutes, until it flakes easily but isn’t dry.
STEP THREE: While the salmon cooks, prepare the salad dressing. Whisk together the olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, salt, and Dijon mustard. Mix well and set aside.
STEP FOUR: Build your salad in a large bowl, starting with 3 cups of spring mix as the base. Top the lettuce with cucumber, cherry tomatoes, avocado, red onion, Kalamata olives, and feta cheese arranged in rows or swirled in a circle for presentation.
STEP FIVE: Once the salmon has finished cooking, remove it from the oven and allow it to cool for 5 minutes.
STEP SIX: Using a spatula, slide the entire filet on top of the salad. Alternatively, flake the salmon into large pieces and pile them onto the salad. Generously drizzle the dressing over the salmon (as much or as little as desired), and enjoy!
Tips for Success
- To easily remove salmon skin, simply lay the raw filet skin-side down and slide your filet knife between the skin and the meat of the fish. The salmon and the skin will easily separate.
- No feta? No worries. Cut into small chunks, Ricotta can substitute nicely for feta in a pinch.
- Be careful not to overcook the salmon, as the taste and texture will lose quality. The fish is done when it is opaque and flakes easily.

Salmon & Marinade
- 5 ounces salmon filet (see note)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice freshly squeezed
- 1 clove garlic minced
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon pepper
Salad Dressing
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon lemon juice freshly squeezed
- 1 clove garlic minced
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon Dijon mustard (or more to taste)
Salad
- 3 cups spring mix greens
- ½ cup cucumber chopped
- ½ cup cherry tomatoes halved
- ½ avocado pitted and diced
- ¼ cup red onion peeled and thinly sliced
- ¼ cup kalamata olives
- ¼ cup marinated feta cheese crumbled
Instructions
- Preheat the oven to 400 degrees F. Line a baking sheet with foil and place the salmon filet onto the foil. Set aside.
- In a small bowl, whisk together the salmon marinade ingredients until well combined. Pour the marinade over the salmon.
- Bake for 12-15 minutes, or until the salmon is opaque and flakes easily. Remove from the oven and allow to cool for 5 minutes.
- While the salmon cooks, add the salad dressing ingredients to a small mixing bowl. Whisk to combine. Set aside.
- To a serving bowl, add the spring mix. Top with the cucumber tomatoes, avocado, red onion, olive, and cheese.
- Add the salmon to the salad (whole filet or large pieces), and top with as much dressing as you like. Serve immediately.
