I have been insanely busy this month and I know it’s only going to get crazier! It all started when I decided that we needed to paint our kitchen cabinets. They were off-white and I wanted them bright white. (Sounds crazy but the change was worth it.) Once we started we also realized they had a weird stippled texture on them that had to go, so our 3 days TOPS project turned into 5! All this, as we were getting our house ready for our friends to come visit us from Arizona for the first time and doing all the Thanksgiving prep! There is so much that goes into cooking Thanksgiving dinner, I start cooking a week out at least! It has been crazy especially because the kids STILL want to eat dinner regardless of how busy I am. All I can say is that these Birds Eye® Protein Blends have been a lifesaver!!! I pop a bag into the microwave for just a few minutes and ta-da! I have lunch or a side for dinner or in this case, 4-Ingredient Southwestern Lettuce Wraps!
They come with 14 grams of protein in a serving, which I love because that helps to keep me full longer. I’ve been busy trying to get all my work done lately while the kids are in school so I can help with homework and hang out with them. That means I’ve been eating at my desk and making super-fast meals! I love that I’m getting veggies and protein and I’m seriously just popping the bag in the microwave! They have a sauce already mixed in so you don’t have to add a thing!
I wanted to serve up something when my friends were in town that was easy to make so I wasn’t stuck in the kitchen. I came up with 4-Ingredient Southwestern Lettuce Wraps and everyone loved them! They weren’t too heavy and didn’t need a thing. I laid out the lettuce leaves and filled them with a couple tablespoons of Birds Eye® Protein Blends Southwest Style. I topped everything with some chopped cherry tomatoes and avocado to garnish, but that’s not necessary. I just happened to have them on hand and thought, why not! These are perfect for bringing to a potluck this holiday season or serving up at your next party because you can serve them warm or at room temperature! I’ve even made them for lunch since then; It’s like a burrito substitute!

Ingredients
- 12.7 oz. bag Birds Eye® Protein Blend Southwest Style
- 1 head of butter lettuce leaves peeled off, washed and dried
- 1 cup cherry tomatoes diced*
- 1 avocado diced*
Instructions
- Cook Style Birds Eye® Protein Blend Southwest Style according to package directions
- Lay lettuce leaves on serving dish
- Spoon 2 tablespoons of Birds Eye® Protein Blends Southwest Style into each lettuce leaf
- If garnishing, top with tomatoes and avocado
- Enjoy!
