Happy New Year!!!!!! I hope you all had a wonderful night with friends and family. That what I had. We got to spend New Year’s Eve with my parents at their house. My friends from college came down with their husbands and kids and we all just hung out, snacked, had some cocktails and just had a great time catching up. It was the first year that we were all married. There is a big difference between celebrating New Year’s in your 20’s and now in our 30’s. 8:30 hit and we all thought it was much later, but we all had a great time. We get busy and don’t get to talk to often but when we get together it’s like we just saw each other last week. I’m very lucky to have found real friends when I was young.
Everyone just showed up when they could and we relaxed. We had lot’s of delicious appetizers for dinner. I originally made these on Christmas day and then made a variation last night for everyone. Using the apple chicken makes these a perfect appetizer for a brunch with friends but you can have them anytime. I loved the flavor that the sausage brought. This sauce is a variation to the cocktail meatballs that are always so popular. It’s great for a party because you just dump the three ingredients into a slow cooker and walk away. They stay warm and do all the cooking while you’re working on other things. Give them a try next time you have friends over and you’ll see how fast they go!
Ingredients
- 2-12 oz. pkg. of chicken & apple sausage cut into 1/2" slices
- 12 oz. chili sauce
- 18 oz. apricot jam
Instructions
- mix chili sauce and apricot jam together in the bowl of the slow cooker
- add in the chicken sausage and toss to completely cover in sauce
- cook on high for 1 hour until warmed through then reduce heat to warm to keep warm for party
