This two-ingredient Washington Mule is the perfect late summer cocktail because its refreshing on hot summer days but is full of fall flavors yet to come!
I’m all about easy cocktails. Why? Because I never quite know exactly what I’m doing, so the easier the better. Plus, I don’t have time to extract my own bitters, let alone dirty a shaker when I will inevitably make a mess. Nope. I’m the kinda girl who likes to pour the ingredients into an ice-filled glass and drink away. That is exactly what this drink is: easy… and quite delicious.
The two ingredients are ginger beer and apple vodka. If you’ve never had ginger beer, its very similar to ginger ale, but the ginger flavor is much more prominent. It’s non-alcoholic. Don’t worry, we fix that when we mix it with apple vodka. I’m super loyal to my favorite brand which is locally made in Portland, Oregon. This is their apple cinnamon-infused vodka and it is delicious. I can’t wait to make more delicious fall cocktails with it.
I’ve made a Moscow Mule before which is basically vodka and ginger beer. It just so happens the flavor of ginger goes beautifully with apple and cinnamon. Think about making hot apple cider for the holidays – there is always a bit of ginger in the cider mixture. The flavors just compliment each other.
I thought this would be the perfect drink to share in August because we are right in that sweet spot where summer is coming to an end and fall is upon us. This drink is incredibly refreshing with just the right amount of sweet, and it just doesn’t get any easier.
Ingredients
- 2 ounces apple vodka
- ginger beer
Instructions
- Pour apple vodka over ice. Top with ginger beer. Garnish with fresh apple slices, if desired.
