This past Easter I was sooo excited to be able to visit with my Grandma at my parent’s house. She lives out in Florida and I’m out in Arizona so I don’t get to see her as often as I’d like. It was so great to catch up and watch my kids spend time with her. My Grandma is diabetic and during our visit I realized I don’t have a lot of sugar free recipes that I could share with her. While we were together I got her iPad set up with a bookmark to the blog so she can check it out and keep up with us.
After talking with Stacey, we both realized that there are more diabetic people in our lives than we knew. We both have a family history of diabetes, as well as friends and some children who live with the disease. Being able to eat some yummy desserts that won’t throw off your readings for the day can be a big deal to anyone.
Werther’s has launched a new sugar free line of their delicious candies! They found a way to keep that amazing taste of Werther’s Originals in their new Sugar Free candies, with only 8 calories, 3g of carbs, and 0% sugar. Our past experience with other sugar free candies was a pretty strong aftertaste. However, when we tried the new Werther’s Sugar Free candies there was NO aftertaste!!! We couldn’t be more excited. Not only are these a great candy for diabetics but for anyone that is watching their calories. Stacey and I have both been trying to get ready for the summer but sometimes dessert cravings make that hard.
We were inspired to create a dessert recipe using these delicious candies. We wanted a treat that would compliment the rich flavor of the Caramel Coffee candies so we decided on a cheesecake pudding cookie. These cookies were AMAZING! They taste like mocha ice cream in a soft cookie. Neither of us felt that we were missing anything without the sugar. We used Splenda Brown Sugar in this recipe so if you are diabetic and make these cookies you want to pay attention. The amount of sugar is close to nil per serving but please be conscious of it.

Ingredients
- 2 ¼ c Flour
- 1 t baking soda
- 1 c butter softened
- ¾ c Splenda Brown Sugar
- 1 t vanilla extract
- 4 1- oz Instant Pudding sugar free, cheesecake flavor
- 2 eggs
- 2.75 oz crushed Werther's Original Sugar Free Caramel Coffee Hard Candies
Instructions
- Preheat oven to 375 degrees
- In a small bowl combine flour and baking soda
- In a large mixing bowl cream butter and brown sugar until light and fluffy
- add in pudding mix and vanilla extract
- slowly add in eggs
- scrape down the sides of your bowl
- gradually add in flour mixture
- once combined add in the Werther's candies
- drop 1 T size balls onto ungreased pan and cook for 10 min
- allow to cool for 2-3 min on pan and then remove to cooling rack to finish

These cookies look delicious, I was making them for a diabetic family member, but I did something wrong…help! My cookies taste like flour, very doughy. Could be a silly question, but was I supposed to actually make the pudding? I was confused because the directions say to add in “pudding mix”, so I just added the pudding powder.
