Of all the easy recipes I’ve posted on my blog, this may be the easiest yet. This yummy Rum & Coke Float combines a classic cocktail with a traditional treat for an adult beverage that’s also a refreshing dessert.
Sometimes, it’s the simplest things that turn out the best, and this three-ingredient recipe is just one of those things. Rum. Coke. Vanilla ice cream. That’s about it, unless you really want to get fancy and add whipped cream and a cherry on top!
I’m not really sure why I haven’t thought of this sooner, as it combines some of my husband’s favorite things. When it comes to taste, he’s a simple man, and while he’s open to trying almost anything, his favorite flavors are usually plain and unfussy. Since his mixed drink of choice is rum and Coke and his go-to ice cream flavor is vanilla (unless peanut butter cup is an option), this recipe has his name written all over it.
But don’t be fooled. Just because Rum & Coke Floats are made with three ingredients doesn’t mean that they’re boring. In fact, it’s quite the opposite. Coke and rum blend together sweet and spiced. A scoop of vanilla ice cream makes the drink frothy and adds a mellow creaminess as it melts. It’s the best of both worlds: the taste of nostalgia plus a boozy kick that’ll get you buzzed!
Rum & Coke Floats would be a delicious addition to a summertime barbecue, poured into plastic soda shop glasses or tumblers. Served with hamburgers, hot dogs, and all the fixings, the meal would be reminiscent of a 50s diner menu!
For underage guests, you can leave out the rum and add sundae toppings and a straw for a “fancy” kid-friendly drink (they’ll be so excited to slurp it down!). This “throwback” beverage would also be a great addition to a cozy movie night in, especially if you’re watching a classic film.
Since this spiked float is so easy to throw together, it may become my new go-to party drink to enjoy and serve as the weather warms up. A beverage that satisfies a sweet tooth while giving you a little buzz… what could be better than that?!
Ingredients
- 1 large scoop vanilla bean ice cream
- 1.5 ounces Spiced Rum
- 5 ounces Coke
- Whipped cream optional
- Maraschino cherry optional
Instructions
- Add ice cream to a tall chilled glass, pour in rum and coke and top with whipped cream and a cherry if desired. Serve with a straw.
