These PUMPKIN OATMEAL COOKIES WITH CREAM CHEESE ICING are the best treat to have on a chilly fall afternoon with a cup of chai or coffee!
My annual fall chai addiction is in full swing. Every afternoon I find myself having a cup and then craving a sweet treat to go along with it. Nothing warms you up like sipping on a warm drink with so many spices! I love to snuggle with my warm boots, that are really more like slippers, watch a movie, sip on my chai and nibble on my cookie. We just had our firewood delivered the other day for the winter and so now my crackling fire has been added to my best afternoon. The rain is in full swing here in Portland and we’re doing good. This is our second winter so it’s the real test. I think the first winter spent here is probably a little easier. You have lots of people telling you to brace yourself but you really don’t have an idea of what it’s like. The second winter you know going in. We’re fine with it though. We have our fireplace and bought raincoats and rain boots. Most go out without an umbrella here. I think it’s all part of how you deal with it. With a raincoat you’re more free to move and get around but an umbrella has be carried all the time. You don’t just stay in during the winter you get out and keep going regardless of the rain. I think that’s how people cope with all the rain. That and vitamin D supplements. 🙂
Back to these cookies! I gave my youngest monkey one when I first made them and he said they were the best cookie ever! That made my day because he will absolutely tell me if they aren’t up to par. The other day he took a tumble down the stairs and hit his head. He had quite a bump on his forehead and gave me a heart attack. He was such a little trooper though and so while he sat on the couch with the ice pack on his head watching a show I let him have a cookie. This was no ordinary gesture and he knew it. You see, I hadn’t taken the pictures yet. As the kid of a food blogger he has learned to ask if I need pictures of all new food before eating it. So, when I handed him the cookie his face lit up and my heart started to beat again. I should have named these cookies the cure for all that ails you but then no one would find them, so I’ve named them Pumpkin Oatmeal Cookies with Cream Cheese Icing and you and I will know their true power! 🙂
Ingredients
Pumpkin Oatmeal Cookies
- 2 cups all purpose flour
- 1 tsp baking soda
- 1 tbsp ground cinnamon
- 1 tsp ginger
- 1 tsp nutmeg
- ¼ tsp allspice
- 1 tsp salt
- 1 ½ cup rolled oats
- 1 cup butter melted
- ¼ cup molasses
- ¾ cup brown sugar
- ½ cup granulated sugar
- 1 egg
- ¾ cup pumpkin puree
- 2 tsp vanilla extract
Cream Cheese Frosting
- 2 tbsp cream cheese softened
- 1 cup of confectioners sugar
- 2 tsp milk
Instructions
- preheat oven to 350 degrees F
- in a large bowl whisk together the flour, baking soda, cinnamon, ginger, nutmeg, allspice and salt
- stir in the oats and set aside
- add the melted butter into the bowl of a stand mixer
- add in the molasses, brown sugar and granulated sugar
- next add in the egg
- once fully incorporated add in the pumpkin puree and vanilla and beat until fulling combined
- slowly add in the dry ingredients and mix until just combined
- line a baking sheet with parchment paper
- drop 3 tbsp sized balls of cookie dough onto the baking sheet spread out
- bake for 10 to 13 minutes
- allow cookies to cool completely (if you can)
Cream Cheese Icing
- mix together (sort of mash) the cream cheese and confectioners sugar
- slowly whisk in the milk and continue to whisk until no lumps
- dip cooled cookie tops into the icing and allow to harden on the counter
