Your favorite summer cocktail just got a makeover! These Mojito Popsicles are full of sweet mint flavor with a hint of lime and a punch of rum!

There is nothing better than indulging in a cold treat on a hot summer day. But is it just me, or are popsicles usually reserved for kids? I’m here to fix that today with these fun mojito popsicles.

Your favorite summer cocktail just got a makeover! These Mojito Popsicles are full of sweet mint flavor with a hint of lime and a punch of rum!

They have everything you love about mojitos – vibrant mint flavor, tart lime, and of course rum. You can’t have a mojito without the rum. These popsicles take very little prep time and are shockingly easy. Just mix everything together and pour it into the popsicle molds, then pop it into the freezer. Get yourself a snack or a cold drink and hang out by the pool. In a few hours, poof! You have a tasty, frozen – adult – treat to enjoy in the sun.

I like to add a few mint sprigs to the popsicle molds when I pour in the mixture. I think it makes them look a little fancy, but this is totally optional. And if you really want to, you can also make these kid friendly by using rum extract instead of actual rum!

Mojito Popsicles

Ingredients

  • 2 1/2 cups water
  • 1 cup sugar
  • 20 mint leaves plus more to garnish
  • 1/4 cup lime juice
  • 1/4 cup rum*

Instructions

  • In a small saucepan, heat sugar and water to a boil. Remove from heat and stir in mint leaves. Cover and let steep until mint syrup is cool.
  • In a bowl combine mint syrup, lime juice and rum. Pour mixture into popsicle molds, adding mint leaves into each one (if desired). Freeze for at least 4 hours.

Notes

* 2 tsp of rum flavored extract can be used in place of the rum (recipe will yield less popsicles)
