If you follow me on Instagram you’ve seen that the kids and I are out visiting with my parents out in California. We love coming to visit and spend time with them and enjoy the beautiful California weather. My parents’ house is gorgeous too, but right now they are having their kitchen redone. It is going to look amazing when it’s finished I can’t wait to see it! That means, though, that there is no kitchen so we are taking advantage of their outdoor kitchen. They have a grill and a couple of burners out back. Look at this picture, would you mind hanging out in that backyard more? I sure don’t. 🙂
So with everything going on in the kitchen this week my recipes will be geared toward cooking outdoor on a grill. Starting with this Grill Baked Brie. I’m sure most of you have a working kitchen so you could choose to just bake this brie in the oven and be as happy as anything but if you are having a backyard BBQ and don’t want to be stuck in the kitchen missing all the fun just make this up on the grill! Your guests will think you’re pretty fantastic. 🙂
Grills are tricky it’s not like an oven where I can say, pre heat to this temp and then bake for this long. Well, I guess I could but I don’t have a nifty thermometer and it’s not that hard to figure out. It did take much longer to bake on the grill but we sat around talking, drinking a glass of wine and munching on the craisins and pecans leftover so it was fun. Don’t you think sometimes the fun is in being with friends and making it, not just eating it? Anyway….. it’s not difficult and you will know when it’s done by looking at it so don’t stress but don’t walk too far away. Stay close. drink a glass of something and enjoy your friends. 🙂
Ingredients
- 1 can Pillsbury Grands! Crescent Rolls Big & Flaky
- 20 oz. Wheel of Brie
- 4 T brown sugar
- 4 T honey
- ¼ c dried cranberries
- ¼ chopped pecans
- 3 T butter
Instructions
- place 2 tablespoons of butter into a round oven safe pan (not much bigger than the brie wheel)
- place pan in grill and turn on allowing both to preheat
- layout 4 rolls and form a square, pinching the seems to close as you stretch them
- place your brie wheel on the dough
- in a small bowl combine 3 Tablespoons of brown sugar and 3 tablespoons of honey to make a paste
- spread the paste on top of the brie top with dried cranberries and pecans
- drizzle remaining brown sugar and honey on top of cranberries and pecans
- start to pick up the side of the rolls and lay out the remaining rolls to cover the brie entirely
- pinch the seams and any thin areas
- you want everything covered in the dough
- spread remaining 1 tablespoon of butter on top of dough and place in preheated pan on grill
- lower flame to low to med
- cover brie with pan lid or foil and close the top of the grill to bake for 30 to 45 min
- remove lid, place on higher rack in grill (used to warm buns) and allow to bake another 15 min
- remove once brown
