Ingredients

Pantry Items: To make these cookies, you will need vegetable shortening, all-purpose flour, light brown sugar, salt, baking soda, and raisins.
Refrigerated Items: Set out an egg and your choice of milk to come to room temperature.
Spices: To achieve wonderful fall flavors, you will need ground cinnamon, nutmeg, and cloves.
Apples: Pick your favorite apples and core, peel, and chop them finely for this recipe.
Glaze: Create a simple glaze for these cookies using powdered sugar, butter, milk, vanilla extract, and half-and-half.
How to Make Glazed Apple Cookies
STEP ONE: Preheat the oven to 350 degrees F. Using a stand mixer or beaters, cream the shortening, brown sugar, and egg until fluffy.

STEP TWO: In a separate bowl, whisk together the all-purpose flour, salt, baking soda, cinnamon, nutmeg, and cloves. Add half of the dry mixture to the creamed mixture, stirring to combine.

STEP THREE: Fold in the apples and raisins, and then stir in the remaining dry mixture and milk.

STEP FOUR: Drop the batter by the tablespoonful onto lightly greased cookie sheets, leaving about 2 inches of space between cookies.

STEP FIVE: Bake the cookies for 10-12 minutes, then transfer them to cooling racks.

STEP SIX: Combine the powdered sugar, butter, vanilla extract, and half & half in a stand mixer and beat until smooth. Spread the glaze over the cookies while they’re still warm, and enjoy!

Tips for Success
- For even softer cookies, bake for 8-9 minutes; for firmer cookies with a soft middle, bake for the recommended 10-12 minutes.
- Be sure to dice the apples small enough that the cookie dough fully covers them, but not so fine that you lose them in the dough.
- Store the cookies in an airtight container on the counter for up to 4 days, or in the fridge for up to 1 week. You can also layer wax or parchment paper between layers of cookies, then put them in freezer bags and store them in the freezer for up to three months.

What apples are best for apple cookies?
With so many varieties of apples to choose from, it can be a little overwhelming to pick the right one! Fortunately, the right apple for many baked apple dishes is usually the one you like best for its flavor and texture. Generally, firm, tart, or sweet apples are great for apple cookies because they maintain their shape, and you can taste them with each bite of cookie. Apples like Granny Smith, Honeycrisp, Pink Lady, and Braeburn are popular choices for baking because they have great texture and flavor. Try out a few of your favorite apples and see which works best for you!

What’s the secret to making the best cookies?
There are always plenty of tips and tricks we all use to make our favorite treats and dishes, but a few common ones we may not think about when whipping up something fantastic. The first is to whisk together the dry ingredients before adding the wet ingredients. Mixing the dry ingredients well is the perfect way to make sure there are no clumps of one ingredient, and be sure to add at least a pinch of salt! A little salt is the second tip —it helps bring out the flavors even more! Lastly, if a recipe calls for room-temperature ingredients, try to use them. Room-temperature ingredients mix more easily, so there’s less stirring and fluffier results!

- 1 ⅓ cups light brown sugar packed
- 1 large egg
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cloves
- ¼ teaspoon ground nutmeg
- 1 cup honeycrisp apples peeled, cored, and finely diced
- 1 cup raisins
- ¼ cup milk
Glaze
- 1 ½ cups powdered sugar
- 1 tablespoon butter
- ½ teaspoon vanilla extract
- 2 ½ tablespoons half and half
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or grease it with non-stick cooking spray.
- In a large mixing bowl, beat the shortening, brown sugar, and egg together until light and fluffy, about 1-2 minutes.
- In a medium mixing bowl, stir together flour, baking soda, salt, cinnamon, cloves, and nutmeg.
- Stir half of the dry ingredients into the wet ingredients. Next, stir in apples and raisins. Then stir in the remaining half of the dry ingredients and milk until well combined.
- Drop heaping tablespoons of batter onto the prepared baking sheet 2 inches apart. (The cookies will spread.)
- Bake for 10-12 minutes, until the edges are golden brown and set. Remove from the oven and let rest on the pan for 3-5 minutes before transferring them to a wire rack to cool completely.
- Once the cookies are cooled, make the glaze by whisking together the powdered sugar, butter, vanilla, and half and half in a medium mixing bowl until smooth.
- Spread or drizzle the glaze over the cookies. Then let them rest so the galze can set up. Store in an airtight container.
