{Easy} Roasted Chicken & Garbanzo Beans is another amazing recipe my mom brought when they were just here visiting. My parents bought me a new cast iron pan and it was awesome for this meal. It makes a perfect family dinner that is super quick and easy to make! You use a spatchcocked chicken! A WHAT? Yeah, that was a new term for me, but the link includes a great video on how to prepare and roast the chicken. I love this great recipe and tutorial! The chicken is absolutely delicious and the roasted garbanzo beans are incredible! I think I will double the beans next time.

Ingredients
- 1 spatchcocked chicken
- Coarse salt and ground pepper
- 1 can 15.5 ounces chickpeas, rinsed and drained
- Fresh lime juice for serving
- Fresh cilantro leaves for serving
Instructions
- Preheat oven to 500 degrees
- Season chicken with coarse salt and ground pepper and place, breast side up, in a pan
- Roast 15 minutes
- Remove from oven and add chickpeas, rinsed and drained, to pan
- Roast chicken until juices run clear when pierced between breast and leg (an instant-read thermometer should read 165 degrees when inserted in thickest part of a thigh, avoiding bone), about 15-20 minutes
- Let rest 5 minutes
- Drizzle with fresh lime juice and sprinkle with fresh cilantro leaves before carving
