Citrus Cilantro Slaw is a light and refreshing side perfect for summer! It works on it’s own or topping your favorite tacos!
We were in California in June visiting family. Now that Casey’s mom moved to California we can visit with both our parents while we are out there. My mom and dad have lived out there for years. They are in Orange county which is further south from where Casey and I used to live. There are a few things that we HAVE to do when we make it out there. First, we have to get In ‘N Out. That became more of a must do now that we live in Oregon. When we were in Arizona we had one down the street so we never had to do without, but now we’re not so lucky. When we drove up to Oregon for our big move we stopped in Redding, CA for the last In ‘N Out before heading into Oregon. The second MUST is a stop at Wahoo’s. We didn’t have one when we lived in CA but now that my parents are there we’ve had them and fallen in love. They serve fantastic Mexican fast food, specializing in fish tacos, at least that’s what we go there for! The last time we were there they had a citrus slaw that I absolutely loved! I decided right then and there I would make it when I go home.
Cilantro is a love it or hate it herb. There really isn’t anyone on the fence. It’s funny because the people that don’t like all say the same thing, “it tastes like soap.” As someone who had their mouth washed out with soap as a kid, I don’t agree. My theory is that there must be a body chemistry thing at work. (How about that for scientific? ) I mean, if it tasted anything like soap to me I’d be staying clear away from it and I’m sure I’m not alone when it comes to this sentiment. 🙂 On the other hand, half the population can’t be story tellers so there has to be something at work making the taste so different for some people. If you find yourself in the soap category, I’m sorry but you could try to make this sans cilantro. If you find yourself in the love it group, don’t be scared off by the large amount of cilantro, it will be worth it and make you happy. 🙂
Ingredients
- 4 cups cole slaw mix with shredded cabbage, carrots and purple cabbage
- 2 cups of cilantro chopped
- ¼ cup fresh squeezed orange juice
- 3 tbsp fresh lime juice
- 2 tbsp extra virgin olive oil
- ½ tsp salt
- ¼ tsp pepper
Instructions
- combine cole slaw mix and cilantro in a bowl
- in a small bowl whisk together the orange juice, lime juice, olive oil, salt and pepper
- pour citrus dressing over top of the slaw mix just before serving and toss
