Pizookie. Have you heard of them? There are a few different restaurants that offer them. It’s sort of a pizza/cookie sundae. It’s a cookie that is barely cooked and then topped with ice cream. How could you get any better than that?
I wanted to do something similar at home but I don’t have a cute little pan and I wanted something really easy. I think that there are two ultimate comfort food desserts, ice cream and warm chocolate chip cookies. We had a stretch of cold snowy days followed by freezing rain, and then finished off with rainy slush. During that week my husband and I walked to the grocery store. We had plenty of food but sometimes you crave pasta and chocolate chip cookies! It was definitely worth the 2 mile walk in slippery, snowy, icey slush.
I waited to put this in the oven until we were done with dinner. That way we had about 30 minutes to let our food settle and then eat this straight out of the oven. That’s the best way! I also slightly under cooked it. You’ve got to eat this hot out of the oven with a big scoop of vanilla or chocolate (or both) ice cream on top. It starts to melt and run down, soaking into the cookie bar underneath. I like to take a bit of ice cream and a bit of the cookie bar in one bite so it’s hot and cold in one bite.

Ingredients
chocolate chip cookie bar
- 2 ¼ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup butter softened
- ½ cup granulated sugar
- 1 cup brown sugar packed
- 1 tsp vanilla extract
- 2 large eggs
- 2 cups chocolate chips

- favorite ice cream
- favorite ice cream toppings
Instructions
chocolate chip cookie bar
- preheat oven to 375 degrees
- in a medium bowl combine flour, salt, and baking soda
- in a large bowl cream together butter and both sugars until light and fluffy
- add in vanilla extract
- add eggs one at a time
- scrape down the sides of bowl
- slowly add in the flour mixture until combined
- stir in the chocolate chips
- spread cookie dough into a greased 13 x 9 baking dish
- bake for 25 min
- allow to cool slightly
sundae
- cut cookie bar into 12 bars
- place a bar into a bowl or plate
- scoop ice cream on top of bar
- top with favorite ice cream toppings
- enjoy!
