This Caramelized Onion and BBQ Pork Flatbread is a fun and easy weeknight dinner that the whole family will be ranting and raving about!
So since summer has FINALLY started we are super busy around these parts. 2 of my boys are in baseball and they don’t play on the same team since they are split up by grades so we have a baseball game every night Monday through Thursday! And usually the weekends consist of tournaments, so we live and breathe baseball through mid-July when it ends, which I hate because I’m one of those baseball moms who is there on the sidelines at every game cheering them on.

But with all the sports and other activities on top of that, it doesn’t really leave much time for dinner most of the week so we usually have pizza. This Caramelized Onion and BBQ Pork Flatbread is one of our go to EASY appetizers or it doubles as a main dish, that we like to make when we have leftover pork or if you want to use pre packaged pulled pork from the grocery store! Some other easy weeknight meals we love are these Old Fashioned Sloppy Joe Sliders and this Supreme Pizza Pasta!
I love caramelized onions like I could sit and eat bowls full just as they are. I know it’s weird, but I’m sure everyone has there own little foodie quirks, amiright?! I thought so. What I don’t like is that they take like 30 minutes to make. So I like to make big batches ahead of time since we use them so much and keep them in my refrigerator until we want to use them. Like for these flatbreads!
These whip up in minutes, literally. You use pre made naan bread as the base, top with some BBQ sauce, pulled pork, cheese, and caramelized onions and toss in the oven for about 15-20 minutes until bubbly. I then top with some fresh sliced red onions and cilantro. I’m a huge cilantro fan and it really plays nicely with the flavors of the onions and BBQ. But some people really have strong options on the herb, so if you’re not a fan, simply leave it off!
This is a really fun recipe for the summer months! You could also add pineapple to make it more of a tropical theme, which we do from time to time but left it off this time! But you can really jazz this up to your liking and add or eliminate a few ingredients to make it your own! But let me tell you that when we make Caramelized Onion and BBQ Pork Flatbread there is not a single slice left in the house! Now that has to tell you something!

Knives: A good set of kitchen knives is essential for any cook. This set is the best one I’ve owned so far and it comes with a knife block, steak knives, and an array of larger knives perfect for all your slicing, chopping, and cutting needs.
Cutting Board: A good-sized cutting board is a must for home cooks. This board is thick & sturdy and makes recipe prep a breeze.
Large Skillet: This skillet is my go-to kitchen tool. It’s large circumference and high sides make it perfect for cooking anything from one pan meals to soups and sauces.
Baking Sheet: A nice big baking sheet is a must have for any kitchen. This half pan sheet is large than a regular cookie and works great for anything you’re baking.
- 1 red onion
- 1 Tablespoon olive oil
- 1/3 cup brown sugar
- 1/4 cup balsamic vinegar
- 2 pre-made naan flatbreads
- 1 cup pulled pork
- 1/2-3/4 cup BBQ sauce
- 1 cup shredded Monterey Jack cheese
- 1/4 cup sliced red onion
- Slice your red onions thinly and add to saute pan with your oil and cook on medium high until translucent and soft.
- Add in the brown sugar and stir until melted in.
- Add the balsamic vinegar and reduce heat to low stirring every so often for about 30 minutes until onions reduce and caramelize, remove from stove.
- Preheat your oven to 350.
- Add your naan to a sheet pan and top with BBQ sauce.
- Sprinkle your pulled pork on top along with your caramelized onions.
- Top with your cheese and bake for about 15-20 minutes or until cheese is melted.
- Top with sliced red onion and cilantro.
