I spent quite a few days at Aubrey’s house helping her pack. There were many boxes to fill, cupboards to empty, and things to get done. Her family was on a tight schedule to finish packing and start their drive to Oregon, so there was not time to mess around. One day I made a super yummy salad (which I will get to you next week) with an amazing Balsamic Vegetable Dressing,that we could eat for a lunch break. The dressing was SO good and the perfect compliment to the delicious salad. I only used 4 ingredients for the Balsamic Vegetable Dressing, so it was quick and easy to make! I love enjoying fresh salads throughout the summer and year and feel good getting in some healthy food, even on busy days.

Ingredients
- ¾ cup V8 Low Sodium Original 100% Vegetable Juice
- ¼ cup balsamic vinegar
- 1 envelope Italian salad dressing mix
- 2 teaspoons granulated sugar
Instructions
- Add all ingredients in a jar with a tight-fitting lid
- Shake well
- Chill in refrigerator until ready to serve
