I’ve always loved French onion soup, but it’s never been complete enough of a meal for my taste. That is until TODAY!

That’s where this French onion chicken recipe comes in. It’s comfort food perfection (and is cooked and ready to serve in under 35 minutes).
After a particularly chilly afternoon last week, I decided I wanted to make this elevated twist on my favorite soup. I realized I had pretty much ZERO groceries in the house and dinner time was quickly approaching. But, Ibotta saved the day (as it often does in my house). I hopped onto my Ibotta app to see what kind of cash back deals I could get on the groceries I needed to make French onion chicken.

It doesn’t get any better than that! And on top of free money, we got to eat a delicious meal that was SUPER easy to make!
French Onion Chicken Ingredients
Chicken Breasts – boneless, skinless chicken breasts are almost always on my grocery list. They’re just so easy to cook and they work perfectly to elevate my favorite French onion soup into a complete meal. (Added bonus: I got $1.50 cash back on my pack of chicken!)
Sweet Onions – you want onions that are going to caramelize really well. Good caramelizing comes from sugars within the onions (and plenty of butter of course!), so I suggest using sweet onions for your French onion chicken breast.
Cheese – in my world, there is no such thing as too much cheese. That’s why we use two different types of cheese for this French onion chicken recipe. A traditional French onion soup would use a slice of Gruyere cheese, but I’ve found that I love the combination of provolone and mozzarella even better! They’re mild cheeses that pair perfectly with the sweet onions and tender chicken.
How to make French Onion Chicken
If you don’t own a cast-iron skillet yet, take this as your sign to get one. I swear by this thing. It gives the most delicious flavor to everything you cook and BONUS – it goes straight from the stovetop to the broiler without any problem. Ideal for crisping that cheese to gooey perfection!
- Grab your skillet and start caramelizing the onions: melt butter and cook the sliced onions on medium heat. Let the onions cook for about 15 minutes. Make sure you give them a good stir pretty frequently. You want them to turn a light yellow, caramel color.
- While your onions are caramelizing, pound your chicken until the breasts are all the same thickness – this is super important for two reasons. First, you want your chicken to be thin so it doesn’t take forever to cook. Second, you want all your chicken to be an even thickness so that it is all ready at the same time – don’t want one piece getting over-cooked while another is still raw!
- Once your chicken is pounded thin, season it with salt, pepper, and thyme.
- Once onions are cooked to perfection, pull them out of the skillet and set them aside.
- Add olive oil to the skillet and add the seasoned chicken breasts, cooking for 5 minutes per side. You want the chicken to be nearly cooked through, but not overcooked.
- Once cooked, pull the chicken out of the skillet and set it aside.
- Throw those caramelized onions back into your skillet and add the flour. Stir and cook for a few minutes.
- Next, add in the beef broth. Make sure you’re stirring quickly so there are no lumps!
- Cook until the sauce is thickened and add the chicken back into the skillet.
- Now it’s time to get cheesy! Turn your oven to broil and cover each chicken breast with a slice of provolone and a slice of mozzarella. Place your skillet under the broiler until the cheese is bubbly and nice and melted.
- Serve hot with fresh parsley for garnish.
What to serve with French Onion Chicken?

My go-to side dish for ANY comfort food dinner (like French onion chicken skillet) is always my Mom’s mashed potatoes. They pair perfectly with the tender saucy chicken. I’ve even been known to use the onion sauce as a gravy on top of my mashed potatoes!
I also love to serve some simple steamed broccoli or green beans or a classic green salad. Gotta get those veggies in! I love to keep my vegetables simple when I’m eating French onion chicken because there is plenty of flavor from the chicken itself.

Ingredients
- 2 large sweet onions peeled and sliced
- 4 tablespoons butter
- 2 cups beef broth
- 4 boneless skinless chicken breasts
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons olive oil
- 1 ½ tablespoons all-purpose flour
- 4 slices Provolone cheese
- 4 slices Mozzarella cheese
- Fresh parsley chopped, for garnish
Instructions
- Place a large oven-safe skillet over medium heat and add the butter.
- Once the butter is melted, add onions to the skillet. Cook for 15 minutes, stirring often. The onions are ready when they turn a light caramel color and are nice and soft.
- While the onions cook, place the chicken breasts between two pieces of plastic wrap. Pound the breasts to an even thickness. Season both sides of the breasts with thyme, salt, and pepper.
- When the onions are done, remove them from the skillet and place them in a bowl.
- Add the olive oil to your skillet. Once the oil is hot, added the seasoned chicken breasts to the pan. Cook for 5 minutes per side until cooked through. Remove the chicken to a plate.
- Add the onions back to the skillet. Sprinkle flour over the onions. Stir and cook for 1-2 minutes to remove the raw flour taste.
- Pour in the beef broth and stir to remove any lumps. Simmer until the sauce thickens.
- Turn your oven on to broil. (see note)
- Return the chicken to the skillet. Cover each chicken breast with 1 slice of provolone and 1 slice of mozzarella. Place the skillet under your oven's broiler and cook until the cheese is melted and bubbling.
- Carefully remove from the oven. Serve warm and chopped parsley on top for garnish. (I like to spoon extra sauce over our chicken and put some on the mashed potatoes too.)
