Making a delicious dessert for the family doesn’t have to be difficult or time-consuming with our BROWN SUGAR PINEAPPLE SUNDAE!
I absolutely love tropical flavors, especially as we are just coming out of winter & easing into spring. Growing up in So Cal & then spending 12 years living all over Nevada, I never really knew a true winter until moving to North Idaho a few years ago. Even with as mild as it has been since we arrived, it’s still so much more than what I was always accustomed to. I spent most of my life living in a climate where I could wear my flip flops almost year-round. So right about this time of year I’m itching to shed some layers, doing a little backyard grilling, work in the garden & enjoy some of my favorite cool no-bake dessert recipes.
Of course, the tropical flavors always top my list because pineapple is my favorite. Nothing makes me more excited for things like warm weather & sunshine like getting a little bite of pineapple or coconut. It instantly makes me smile & I can’t get enough. So of course these Brown Sugar Pineapple Sundaes are one of my “go-to” desserts to make. That amazing pineapple flavor caramelized with brown sugar & butter makes this like bananas foster- but with pineapple in place of the bananas. Imagine that! Oh my – that caramel syrup is soooooo delicious. To cut that sweetness of the caramel just a bit I add a splash of lime juice after cooking. It gives it a refreshing & unexpected twist that is so wonderful.
I love this because I can make this almost any time the mood strikes. I always have these ingredients in the house. Sure makes it really convenient. Just combine your ingredients in a small saucepan & cook until the butter & sugar melts. Add the lime juice at the end- YUM! This won’t get too thick because the juices from the pineapple thin it out, which works out great for consistency. You can let it cool a little before topping on your vanilla ice cream or you can add it while hot. I like it hot because it melts the ice cream a bit & really makes for an amazing blend of flavors.
Now if you really want to go all tropical – you could serve this top on of coconut flavored ice cream instead of vanilla. Wow, that sure is delicious!!
Ingredients
- ½ stick butter 1/4 cup
- 2 cups fresh cut pineapple
- ½ cup packed brown sugar
- 1 tbsp fresh lime juice
- vanilla ice cream
Instructions
- Combine butter, brown sugar & pineapple in medium saucepan
- Cook over medium heat until butter is melted & sugar has dissolved
- Turn heat down & simmer several minutes
- Remove from heat & stir in lime juice
- While still quite warm, spoon pineapple & sauce over several scoops of vanilla ice cream
- Enjoy!
