Hi guys! If you aren’t familiar with me, I am in the process of raising three of the spunkiest, weirdest, most wonderful kids ever. My littlest one, Piper, is only one and she is giving me a run for my money. Kiddo likes to try ALL the new foods (YAY!!) but then doesn’t like to actually eat any of them (BOOOOO!!!).
She is a tiny little nugget, way smaller than my other two were at this age. So anytime I find a food that she not only wants to try but wants to eat, I rejoice.
Hello Pumpkin Oatmeal Smoothie!
Piper loved this smoothie! I could barely finish photographing it before she was going to town on it. Huge win!
So this smoothie starts out with frozen pumpkin. How you may ask? Simple. Line mini muffin tins with a little aluminum foil pieces. Freeze them, transfer them to a plastic bag, store in the freezer, and peel off the foil when you are ready to use. Each one ends up being just about 1 TBSP of puree. Perfect, right?
This recipe makes two good-sized smoothies that are about 120 calories each and have about 9 grams of protein. Another win! The creaminess in this comes from low-fat cottage cheese. If that’s not really your thing, you can replace it with vanilla yogurt, though I love the cottage cheese for the taste and for how it gives you a lot of protein for not a lot of calories and with no added sugar.
Ingredients
- 1 cup milk
- 4 TBSPs frozen pumpkin puree
- ¼ cup low fat cottage cheese I used 2%
- 3 tsps agave nectar or more to taste
- ¼ cup quick cooking oats
- ¼ tsp cinnamon
- ½ tsp vanilla extract
Instructions
- Add the milk and oats to the blender. Let sit for 10 minutes.
- Add the remaining ingredients and blend to combine.
