Wow where did summer go? As we say goodbye to summer that doesn’t mean we can’t transfer the summer flavors in hearty dishes like this fabulous side dish. When I think of fall I think of comfort food. Anyone else with me? I bet you are! That means pasta, casseroles, and potatoes of course. I love bringing a few of my favorite flavors right into fall with me. You guys don’t have to put the lemon away until next spring I promise! If you are a lemon lover like me that I know you are rejoicing right along with me at this news!
Side dishes are a hard one for me because it seems like I gravitate towards the same quick and easy standbys. It’s kind of hard to get out of the box. Usually I’m adventurous on my main dish but by the time I get to the unimportant side dish my brain cells and creativity are gone. I want something quick, easy, and something my family will love of course. Lucky for you I went out of my box and made these delicious Lemon Dill Potatoes. They are still quick and easy of course and the whole family will love them with their delicious butter sauce that’s infused with lemon and dill. Don’t worry if you have a few people that aren’t lemon lovers. My husband isn’t either and he loved these. The lemon flavor is quite subtle with just a hint so everyone at the table will love them!
Ingredients
- 1 ½ lbs small potatoes
- 3 Tbsp butter melted
- 2 tsp snipped fresh dill
- 2 tsp lemon juice
- ¼ tsp pepper
- ½ tsp salt
- ¼ c. Parmesan cheese
Instructions
- Place potatoes in a large pot of water. Bring to a boil. Reduce heat, cook, uncovered for 15-20 minutes or until tender.
- Drain and return to pan. Mix remaining ingredients; drizzle over potatoes and toss to coat.
